If its for estimates go to 80 people over estimating is always good because it is better to have more money put away than less. You will be giving a final number later so don't worry about over estimating.

yes include yourself and everyone that will be eating a meal. Something that i learned though when booking your hall in order to reserve certain rooms you need a minimum number of guests and that will be set in your contract that is the minimum number you must pay for even if less people actually attend so try to low ball the number as much as possible as it does not cost anything to increase it later on!

Count the guests and yourselfs with your party. Do not count the dj, photographer, and other such people. They are not your guest, they are there working. They do not sit with you and your guests, they will eat when they can maybe in the kitchen. Do count your priest/rabbi if they are invited to stay for the wedding party.

Unless you don't plan to attend...then count yourselves o ut. Also, you need to include the photographer and the officiant (priest or judge), sometimes the DJ. Ask if they provide any gratuitous meals (or discounted meals) for other people who are working the wedding...they are with you the whole day...they need to eat.
