Cucumbers are high in fiber, both soluable and insoluable ( if eaten with skin on), they also have vit. C and a high water content, that is why you cannot freeze them.

For 1/2 cup of slices with the peel you are looking at the following:
7 cal
1 mg sodium
0 cholesterol
1.44 gm Carbohydrates of which .4 is Dietary Fiber
.36 gm protien
Less then .07 gm fat
The seeds can be difficult to digest, usually causing gas in the form of burps.

They're not hard to digest, but do cause burping in some people. There are "burpless" varieties of cukes out there now. Maybe the burping is what makes people say they're hard to digest.
Very low in calories, high in fiber and vitamins/minerals. Great veggie to eat!

It is mainly water so don;t think it is hard to digest, but that's just a guess really. They are made up mostly of water with a bit of Vitamin C & fibre.

apparently it takes more calories to eat it than it does in the cucumber.
But I have also heard its 5 kcals per 100 gramms. I'd go with the latter, you dont get antything for nothing these days!
