My husband does this : he always writes about what he felt the first time he saw me and how he felt on our first kiss, and how beautiful I am don't use pretty it isn't as nice. How he feels when he is with me.

Hmmm. I just wrote one about a month ago. Basically, the only real reason that I did it was so that my boyfriend would be more secure in our relationship. I'm not saying that I just wrote for that though.
You should include how much you like him, how you like to spend time with him, tell him he has nice eyes, use some love quotes from on-line. I did a few of those too. Don't make it too mush unless he is a sensitive guy.

Your feelings, why you feel that way, what it is about them that makes you like them, what you thought when you first saw them. Look in some old poetry books for inspiration.
