Classic Meatloaf
Ingredients:
1-1/2 pounds ground beef
1 can (8 ounces) tomato sauce
1 cup soft bread crumbs
1 egg
1 small onion, finely chopped
2 teaspoons Worcestershire sauce
1 teaspoon dried thyme leaves, crushed
1/2 teaspoon garlic salt
1/4 teaspoon pepper
Topping
1 tablespoon packed brown sugar
1 teaspoon dry mustard
Procedure:
Heat oven to 350°F. Measure 1/4 cup tomato sauce, combine with topping ingredients in small bowl.
Set aside.
Combine remaining tomato sauce with remaining meatloaf ingredients in large bowl, mixing lightly but thoroughly.
Shape beef mixture into 8 x 4-1/2-inch loaf on rack in broiler pan. Spread topping over meatloaf.
Bake in 350°F oven 1 hour to medium (160°F) doneness, until not pink in center and juices show no pink color.
Let stand 10 minutes before cutting. Cut into slices.
Makes 6 Servings
Cook's Tip: To make soft bread crumbs, place torn bread in food processor or blender container. Cover, process, pulsing on and off, to form fine crumbs. One and one-half slices make about 1 cup crumbs. To save time, and for a different presentation, beef mixture may be divided evenly and shaped into three 1-1/2-inch thick loaves. Place on rack in broiler pan, spread topping evenly over loaves. Bake in 350°F oven 40 to 45 minutes to medium (160°F) doneness, until not pink in center and juices show no pink color.

Ok I'll try, I do not measure so it will be rough.
I am a great cook but when it came to meatloaf it always tasted like Hamburger & tomato sauce when I used recipes, so I made my own.
Mix in big bowl:
2 lbs hamburger ( for variety use 1/2 sausage)
2-3 eggs
3-4 slices soft bread crumbled very small
1 Tbs Italian Seasoning
1 teas minced garlic
1/2 onion chopped
1 small can sliced mushrooms, drained
1/2 teas salt
1/4 teas pepper
1 Tbs Catsup
1 teas mustard
3 Tbs Chili Sauce
Mix well & scoup out onto a piece of foil about 20 inches long. Push meat mixture to be about 1/2 - 3/4 inch thick x 10 inches wide x 15 inches long. Sprinkle meat with shredded cheese(I use the Italian 4 cheese kind & Parmasian) I may even add some more Italian Seasoning. In a wild mood I will add black olives also. Or Pepperoni. Start at one end on the width side & roll up like a jelly roll. (I find it easy to just pick up the foil & push it down in place & roll. When you get to the end, push sides down to seal cheese into the middle. Set baking dish beside meat & roll into baking dish seam side down. Bake at 340 for 35 minutes or until cheese starts to ooze out. Remove from oven.
In bowl mix well:
4-5 Tbs Chili Sauce
1/2 teas mustard
2 1/2 Tbs brown sugar
1 teas margarine
Pour over meatloaf as a glaze
Return to oven for about 15 minutes
Serve

What the Americans now call meatloaf originally comes from Germany and it is called hackbraten here is a recipe
1¼ hours 15 min prep
Change to: servings US Metric
4 tablespoons butter
1 1/2 cups chopped onions (divided)
2 slices white bread, trimmed and diced
2 tablespoons chopped parsley
3/4 lb ground beef
3/4 lb ground pork
1 egg, beaten
2 teaspoons salt
1/2 teaspoon fresh ground black pepper
1/2 cup dry breadcrumbs
3/4 cup hot beef broth
Melt 2 tablespoons of the butter in a skillet; saute half the onions 5 minutes.
Mix in the diced bread and parsley; saute 2 minutes.
Combine this mixture with the beef, pork, egg, salt, and pepper.
Mix well and shape into a loaf; sprinkle with the bread crumbs.
Melt the remaining butter in a baking pan.
Place the loaf in it and add the broth and remaining onions.
Bake in a 375°F.
oven 1 1/4 hours, basting frequently.

Turkey Meatloaf
Ingredients
3 cups chopped yellow onions
2 tablespoons good olive oil
coarse salt
freshly ground black pepper
1 teaspoon fresh thyme leaves [1/2 teaspoon dried]
1/3 cup Worcestershire sauce
3/4 cup chicken stock
1 1/2 teaspoons tomato paste
5 pounds ground turkey breast
1 1/2 cups plain dry bread crumbs
3 extra-large eggs, beaten
8 slices bacon
Method
Heat oven to 325°
In a medium sauté pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.
Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Lay the bacon across the width of the loaf from one end to the next.
Bake for 1 1/2 hours until the internal temperature is 160° and the meatloaf is cooked through. [A pan of hot water in the oven under the meatloaf will keep the top from cracking.]
Serve hot, at room temperature, or cold in a sandwich w. plenty of mayonnaise ;o)

This is the one I use. Husband and (VERY PICKY!!) kids love it.
1 1/2 lb. ground beef (I like chuck)
1/2 cup crushed Ritz crackers
3/4 cup shredded sharp cheddar cheese
1 (1.25 ounce) package dry onion soup mix
1/4 cup ketchup
2 tablespoons A-1 Steak Sauce
1 tablespoon Worcestershire sauce
1 egg
2 slices bread
Preheat oven to 350 degrees.
In a large bowl, mix all ingredients except bread slices together thoroughly.
Line bottom of loaf pan with the sliced bread. (This will help absorb most of the grease that cooks out of the beef.)
Press meatloaf mixture firmly in the loaf pan and bake for one hour, or until done.

Simple Skillet Meatloaf
1 lb ground beef - or turkey
1 small can tomato sauce
1 pkg. onion soup mix
1/2 cup green peppers and onions
garlic powder and black pepper
Mix all ingredients in a bowl and shape them into patties. Brown them up in a pan on both sides. After they are brown, mix a packet of brown gravy mix and water together in a bowl and pour it over the patties. Drop your heat to simmer, and you can add some mushrooms in the pan. Put a lid on it and let it simmer for 20 minutes. Serve with rice or mashed potatoes and green beans.

2 lbs of ground beef
2 eggs
1 envelope of Lipton Savory Herb and Garlic soup mix
1 1/4 cup Italian breadcrumbs
3/4 cup BBQ sauce (I like hickory flavor)
chopped onion
chopped bell pepper
Mix all the ingredients together real well. Put into a loaf pan and cook for about 1 hour at 350*. Serve with creamed potatoes and we like green beans and garlic toast.

I make my meatloaf Italian style....kinda like a big stuffed meatball.
Mix meat, eggs(1 per lb), breadcrumbs (about 1/2 cup per lb), lots of Parmesan cheese, fresh garlic (to taste), Italian Seasoning (dried herbs packaged together) about 1 tablespoon. salt and pepper.
take 1/2 your meat and flatten in the pan then stuff with hard boiled eggs, salami, ham, cheese..whatever you like. cover with the rest of the meat mixture. Cover with tomato sauce and sprinkle with Parmesan cheese.
Bake in a 350 degree oven till done...about 1 hour for 2-3 lbs.
I serve it with spaghetti.
