I am having a vegetarian dinner party today and for the main course am serving red peppers stuffed with cous cous, mushrooms and goats cheese. Can anyone this of anything that I can serve this with?

How about rice pilaf or refried black beans w. lime and garlic?

Try this as a starter:
Baby Arugula/Romaine Salad with Roasted Grape Tomatoes and Toasted Pine Nuts

1/2 head romaine lettuce
6 oz baby arugula
30 grape tomatoes
4 thin slices vidalia onion
16 thin slices cucumber (peeled)
1/4 C toasted pine nuts
vinaigrette: 2 T balsamic vinegar, 5 T olive oil, 2 T dijon mustard, 1 T chopped fresh tarragon, salt, hot sauce to taste: whisk together, add a small amount of water if it's too thick
1 additional T minced tarragon

Remove outer leaves and tear romaine into bite-sized pieces. Toss with baby arugula. Slice 30 grape tomatoes in half, toss in olive oil and roast about 30 minutes on a baking sheet in 325º oven. Tomatoes should look desiccated but not totally dry. Salt to taste.

Toss greens with dressing, then lay on onions, cucumbers and tomatoes. Scatter on pine nuts and additional minced tarragon.

Even though you have cous cous in the recipe, rice (jasmine) is still a good call, if you keep it plain and not disrupt the flavor balance of the peppers. Adding asparagus tips to the rice would be a nice touch

you could get some tomatoes in the oven now.
Get the best tomatoes available. (normal size ie not Cherry, nor beef)

Cut in half. Put in dished baking tray,
Make a paste of crushed garlic rock salt fresh ground pepper and basil and olive oil.Put some of this paste on top of each tomatoe and then sprinkle generously with balsamic vinegar.

Slow roast for at least 4 hours at about 50-100C.

I find a little bit of homemade coleslaw works a treat with stuffed peppers. Good quality mayo with good fresh cabbage and carrot. If Mayo would be taboo I have done low fat style coleslaw with natural yogurt before and it also works with the peppers.

As stuffed Peppers might not be filling enough, I would suggest jacket potatoes with butter and some sort of hot spice.

I enjoy adding something sweet but fruity to my meals...most of the time, so I would serve a topical mango, tomato, onion, mint, perhaps some pine nuts sort of relish/salad...or something of this sort:-) with the stuffed peppers.

What about some rice mixed with sweetcorn and peas? You could serve it with some crusty french stick.
