It depends on the species. Do you mean how many eggs can a bird produce in a day, in a clutch, in a month or in a year?

It really depends on the bird. Most all birds will lay till they achieve a clutch the number of which is based on the type of bird. Some species will lay as long as you keep removing the eggs like a chicken.most species will stop laying even if you constantly remove the eggs,Birds lay according to the daylight hours within a day as the hours increase the birds begin to lay once the hours of the day reach their climax they will begin to shut down egg production.Even with domesticated type birds you will find this.Turkeys will stop laying around June to July where as a pheasant begins in late April and will stop around the last of July.Ducks begin close to the time turkeys do but stop sooner.Domestic chickens stop egg production towards the end of July through august when they are going through their molt.So again it depends on the species.A chicken can lay up to 265 eggs in a year.A turkey will lay around 50 again these number only occur aslong as the female isn't setting.

In essence a bird will keep laying if the eggs are removed or have broken. If a bird retains their eggs the species needs to be taken into consideration; each species will lay a different amount i.e. Doves lay 2 eggs vs. a finch who can lay up to 5+. If you remove the eggs or they break the mother may continue to lay if she is a determined mother. My female doves will continue to lay until they are able to sit, so what I do is pull her eggs and replace them with dummies so they can sit and I don't have to worry about my Dove population increasing. When a bird continues to lay it can be detrimental to their health and well being. They can suffer from calcium and/or vitamin deficiency. It also causes a sense of frustration if they cant sit they may go into a slight depression.
