The capital "M" shows us that this is a reference to mankind, an all embracing allusion to the human race. "Man is mortal" is a complete sentence, reminding us that our days on earth are numbered.
Not that I need reminding -- I have a birthday tomorrow!

If that is the complete sentence, the captial M is correct because "man" is the first word in the sentence. If the sentence was something like, "According to Shakespeare, man is mortal" then "man" would not have a capital "m". The word is not refering to a specific person, so it would not be capital.

I don't quite understand what the objection might be? "M" in "man" in this case is correct because it is the initial letter of the first word in a sentence.
