If they make these noises, the subfloor is probably not flat. This allows the hardwood boards to flex.

Yes they do. All real wood hard wood floors will do this to some extent. It is caused from the expansion and contraction of the wood. It happens more in the winter than the summer. I have heard of it also happening because of settling of the house, but that isn't as common. I would assume that your floors are relatively new, and then it will stop or slow down so to speak for the most part. On the other hand if your house is very old, don't expect relief as the nails have probable started to "work loose" . This is not a serious problem just annoying.

It is because the sub floor has come loose from(or was never attached to) the floor joist.

Yes, and it's because they were installed long ago without the felt padding underneath them.
