Fundy is a term generally ascribed to right wing, conservative Christians. It is usually referring to our beliefs in the fundamentals of the Bible, and generally the word is used in a derogatory manner.

I suspect it is a sort of nickname for "Fundamentalist." The Fundamentalists are a group of people who adhere to a literal reading of the Bible. The movement was founded in response to the publication of a pamphlet called "The Fundamentals" which appeared in England shortly after the publication of Darwin's "Origin of Species"

It's an abbreviation of fundimentalist. Basically a fundimentalist is someone who takes their beliefs, in most cases religious beliefs, to the extreme.
Most uses of it refer to what are otherwise known as "Bible Bashers" - people who attempt to enforce their beliefs upon others, sometimes to the point where they become violent towards said non-believers.

"Fundie" is short for "fundamentalist."
It's the term we use to describe the Bible-thumpin', woefully ignorant, intolerant and bigoted Christians of the bunch.
Great thing about a fundie is that you can spot one in about 8 seconds.
