why do potatoes go soft when boiled but eggs go hard

Rude too. Potato's are starch, goes soft when boiled. Eggs are high in protein, protein coagulates(becomes solid) with heat.

The shell cooks the egg on the inside. Heat cause the potato to go soft. There is nothing containing it (like a shell)

Basically the proteins in the egg combine to go hard, and by removing the starches from a spud causes it to go soft. by the way as others have pointed out your no dumb big guy awreet
