Horse riding or music lessons wouldn't involve a big class if that is the sort of situation that makes her feel shy. Gymnastics or stage classes may help her get over her shyness while having fun.

Have a talk with her and see what she fancies doing, it may be that she wants to do another dance class (ballet is often a winner with little girls or ice skating) or spend time doing a hobby at home with you and her Mum.

I think gymnastics or trampolining. She's at a great age for trying new things.
Congrats on your engagement! (That is what fiance means, right?)

Aikido
- great martial art to teach a girl, low impact, beautiful sweeping movements, and the ability to defend herself but not to attack
- also teaches discipline and confidence
- emphasis on non-violence and directing opponent's strength against him

Art... gymnastics... horseback riding... crafts...

Check what her real interests are, if she's so much of a girly girl and is shy, she may find arts & crafts are her favorite. My girl's favorite was horseback riding, though of course it was on a little pony.
