For a classy dinner party, individual beef wellingtons are perfect.
I used scotch fillet portions (eye fillet is good. Just make sure its quality and tender)
I sealed the fillets (one per person)
Then on each piece of beef I added chicken liver pate and top with sauteed mushrooms.
You then wrap it all up in puff pastry and bake. (wrap pastry with seam side under) If pastry gets too thick on bottom just stretch and cut off excess.
You can add your guests initials with pastry on each beef wellington.
Its really really yummy.
But make sure its good quality tender cuts of meat. Approx 1inch thick-...
You can serve them on a plate with a lovely gravy/sauce/jus on the bottom and nice with mash potatoes

Beef Chops with Origano
Beef chops 600 gr. each
Ripe tomatoes for sauce 600 gr.
Garlic 2 cloves
Extra-virgin olive oil 6 spoonfuls
Oregano a pinch
Salt to taste
Pepper to taste
Wash the tomatoes and peel them. Remove the seeds and slice the tomatoes. Beat the meat with a meat mallet. Salt and pepper them on both sides.
Put the oil in a saucepan on the fire and add the meat. Raise the heat and braise them on both sides well. Then peel the cloves of garlic and dice them. Add them to the meat together with the tomatoes and the oregano. Add some salt and pepper if required. Cover the saucepan and cook for 3 minutes at low heat until the tomatoes have dried. Add some water if necessary. Arrange the meat on a serving dish and pour over its sauce. Serve hot.
Beef in Hot Sauce
Lean beef 500 gr.
Onions 1 Garlic
Cloves 2
Parsley a handful
Anchovies 2
Red peppers in oil 1
Red wine ½
Vinegar ½
Salt as required
Pepper as required
Extra virgin olive oil as required
Tomato sauce 500 gr.
Cut the onion and the garlic into small pieces and put them into a pan with extra virgin olive oil. Let them all brown. Cut the beef into small cubes, dice the red peppers and the parsley and remove the bones from the anchovies.
Add the beef to the pan and simmer for about 2 minutes (just the time to scald it) Add the parsley, peppers, anchovies and the tomato sauce. If you wish, add a pinch of black pepper and salt according to your taste. Let it cook for about 50 minutes

Think about beef and the many fun ways to eat beef. A dinner party doesn't mean you have to go fancy-elegant. You can have a casual/fun beefy dinner party! I entertained with barbecued Tri-Tip and had angel-hair alfredo with fresh basil as a side-dish, fresh green beans, a salad and some bread. It was lovely.
I also have entertained using beef and veggies making a fajita bar, serving margaritas, guacamole and a variety of salsas. That's a fun dinner party, too.
Also... you can use a good ground sirloin or angus and make some fancy, schmancy burgers adding crimini mushrooms, fresh sage leaves and red wine when you make them.
Have fun with beef. It doesn't have to be traditional steak or prime rib to be delicious and fun!

How formal is this dinner party or is it just friends coming round for dinner? My friends love my Fajitas made with strips of beef. Or try a beef stir fry with oyster mushroom sauce.

I live in the mid west.. aka beef country.. :).. ok what we meat eaters do for a new thing..? hmmm
my wife always uses yahoo searches for recipes all the time..
Me I'm a bit of a cook from the hip. I would try a roast for a large number of people... My favorite is dutch... "corn beef" slow cooked its wonderful. maybe just good old bbq..! can't go wrong there.

By out of the ordinary, are you thinking about serving beef in different ways? Here are some dishes that I have used in the past that celebrated my love of beef:
1. Beef tenderloin stuffed with a bread and gorgonzola cheese stuffing, topped with a cabernet glace. Serve with garlic mashed potatoes and fresh green beans with lemon butter.
2. Chateaubriand, rubbed with kosher salt, fresh ground pepper, garlic, and beau monde seasoning. Grill to medium rare to rare and slice thinly. Serve with fresh steamed asparagas topped with parmesan cheese and baked potato casserole.
3. Beef skewers tangine
4. Good old fashioned meatloaf made from ground sirloin, with sauteed bacon, onion, and tomato, with a sweet and sour glaze, served with homemade mac and cheese and peas.
5. Beef brisket, rubbed with chili powder, cumin, garlic, salt, and pepper, grilled slowly until tender. Shred and serve with warm flour tortillas, guacamole, sour cream, cheese, lettuce and tomato. As sides, consider a spanish rice and black beans. Flan for dessert.

buy a fillet of beef and roll it in crushed peppercorns. seal it in a pan then roast in the usual way.
