The only way that I have ever been able to catch the dirty
little buggers (and trust me of caught hundreds) is by
a) as above ---at night
b) with a heavy duty coat (leather or canvas)
c) gloves (good strong ones), eye protection (safety glasses or the like.
d) not a butterfly net (to weak, they break thru them, but a fishing net
e) LOTS of hope, and strength to hold on once you do have it!!
I know this all sounds ridiculous, but hey when you've caught them for a "living" it's honestly the only way to go, so you don't get as you said ripped to shreds, because those shreds hurt like a son of a gun and get infected VERY easy.
Good Luck!!! Now just don't ask me to tell you how to catch a pig....That would take days to explain LOL.

Wow, you must have some mean roosters. I used to just reach down and catch both of their legs together and hold them upside down. I guess if you're having a problem then catching them at night, as others have suggested, is the most painless way to get them.

I have used a "leg hook" fashioned from a 4 foot length of 3/16 solid steel wire. Take the last 3 inches or so and bend it back on itself leaving enough room for the ankle of the bird and not large enough to let the foot escape. Throw out some food to distract the bird and catch the leg just above the foot.. and lift it off the ground, then catch the foot and then the other. (You may have to make a few attempts to get it right).

I am researching the same thing. It's not as easy as people make it sound. They can fly into trees and run much faster than me. We have a rooster in our yard that has both legs tangled in string. The neighbor kids caught him to use as practice for their fighting roosters. He must have gotten away and now he's tangled in his leash. Poor thing is freaked out. He can't walk very well and I'm sure he will die if he's not rescued. He seems to know every trick in the book and I can't get near him. I have live traps but he can't get in them. Trying the lassoo string trick with bait but it takes lots of patience and I just want to catch this particular rooster. Any of you have any ideas for me?
