You need to find out the reason why her parents are giving you a hard time. No relationship is ever easy and this happens to be one of your challenges. A serious and long term relationship is never only between 2 parties, it involves the people around them.
If you really love your girlfriend and you can picture a future together with her, try to change her parents' opinion of you. She will appreciate your efforts for doing so and in turn love you even more. It will make your relationship stronger as well.
My ex-bf didn't make the efforts to care about my family members and didn't want to get to know them better. In the end, it caused a rift between us because I made the efforts to care about his side of family but he did not. We broke up abt a mth ago...I sincerely hope that you will be able to get through this and have a fairytale ending with your girlfriend.

If she wanted to be with me and I wanted to be with her, I'd say forget what her parents think, we feel how we feel about each other, who cares what anybody else thinks. It's like the song "Don't Matter" by Akon, "Nobody want tot see us together but it don't matter no, cuz i got you babe." Ha.
