Chicken Parmesan
Skinless/boneless chicken breasts
2 eggs
milk
Italian bread crumbs
Spaghetti sauce
angel hair pasta
mozzarella cheese
Pound the chicken so it's about 1/4-1/2" thick. Mix the eggs and the milk together to dip the chicken in. Coat the chicken in the bread crumbs, then fry in oil about 350*. Transfer the chicken to a skillet and pour spaghetti sauce around it. Cook until it's heated through. I use shredded Mozzarella and sprinkle it on the chicken. Cover it with a lid until the cheese is melted. Serve over cooked Angel Hair pasta. Serve with salad and garlic bread.

Grill or brown in a skillet until the outside is seared and has nice grill marks or if in a skillet, nicely browned. Place in a lightly oiled or buttered baking dish. Then add one can of condensed Cream of Mushroom soup undiluted (don't add water or milk). Cover and bake at 350F for 40-45 minutes.
Serve with Rice Pilaf and grilled asparagus or just heat the aspargus in a skillet with a little olive oil and a touch of butter.
To drink: Ice Tea
Prep time 20 minutes
Cook time 45 minutes.
Dinner in an hour.....
This can also be done with boneless pork chops too.

A good recipe is called chicken tacos.
Ingredients:
4 Boneless breasts
10 Flour tortillas
1 can enchilada sauce
cilantro
Cheese
Boil your chicken in water and dried cilantro until done
Take chicken out and cut into small pieces.
Dunk Tortillas in chicken broth and cilantro until moistened
lay down in a casserole dish, add one layer of chicken
drizzle some enchilada sauce over chicken and then sprinkle cheese. repeat until everything is gone.
Drizzle sauce over rolled tortillas and add even more cheese.
Cook at about 350 for 30 minutes
You can use cheddar, Mexican blend etc.

what isn't easy to make with boneless skinless chicken? saute' with veggies , toss with pasta, or rice . pour spagetti sauce over and bake 30 min. buy any of the mainades in the grocery store then broil. use some imagination.

Grill in grill pan or on outdoor grill. Rub some olive oil into the breast and sprinkle Montreal Grill Seasoning over the top.
Another easy recipes: cook in a little olive oil or butter until partially cooked. While cooking, whisk together some apricot jam, a little Orange juice or white wine to thin it, and pour over chicken, cover and finish cooking. Serve over white rice.

One of the easiest I know is to cook it in an electric skillet with just a bit of olive oil and seasonings of your choice. From there you can use it in soups, mix it with stir fry veggies, or pasta. Add tomato pieces and just a bit of leftover spaghetti sauce for an Italian flavor.
Once you have the basic (the chicken) cooked, you can do almost anything.

put chicken in a casserole pan, pour on a can of Rotel tomatoes, cover with foil, cook till done, about 45 minutes at 375. Serve over white rice! YUMMY! One of my families favorites and SO easy for me!

You can cook it and eat it cold in a salad, or sandwich, omelette, or just on its own. I like to fry up some onion, garlic, oregano, tomato, peppers, olives, and the chicken, let it simmer for a while and eat it with pasta. If you dont have peppers, put in what you do have.... maybe some carrot, celery or zucchini.

Take 3 or 4 of the breasts,thawed, season with your favorite seasoning,(i like adobo) lightly seer in a skillet,both sides, add a can of your favorite canned tomatoes, slice & chop onion & bell peppers in with chicken & tomatoes, (you may also add a can of mushrooms if you like ) cook covered on med. low heat , checking occasionally, for approx. 35 to 40 min.
