I have 2 thick pork chops (1.25 inches) that are coated lightly with olive oil and rubbed with Pork Chop Seasoning and Shallot Pepper (both from Penzeys).

This is my first time baking pork chops, and I don't know how long to leave them in the 350 oven.

I like them slightly pink in the middle (not overcooked).

The websites I have checked ranged from 20 minutes to an hour and a half!

Experienced pork chop bakers, please answer. No recipes, these are already cooking!

FYI to Casper and others:

To get tender pork chops, they should be slightly pink in the middle. If they are completely white, they are overcooked and tough.

I would set the time to 45 minutes. If you are covering it then about 10 more minutes. This is if the pork chops are completely thawed.

Pork chops used to be the bane of cooking meat. Now it's easy. Brine it first. Put in heavily salted water for at least 3 hours. This flavors it and helps keep it juicy and you wont have to salt your meat. Now most people you talk to will insist you cook your meat to 160-165 internal temp. Well sure if you get your pork from your neighbor's back yard and enjoy eating sheet rock. Today with the meat industry trichinosis is nowhere to be found. Cook your meat in the oven to an internal temp of 140. When you let it rest it will go to 145 and that is perfect. Most chefs insist on this. It's a bit pink inside and perfect. I just got some 1 in. chops today and that's what I'm going to do. Honestly you'll be very pleased with them.

Baking takes approx double the time to broil.

I broil my chops at 500 for 8 min a side.
(my broiled chops are legendary because broiling dosen't dry out the meat)

To bake I'd guestimate 30-35.

FIRST don't ever eat pork that is still pink. Trichinosis haven't you heard of that bacteria from pork?
Try first putting them in one of those black iron skillets and get some color on the outside of the chops by frying and a little cooking that way. Then leave them in the skillet and place the entire thing in the over for baking. Bake at about 350 degrees for 45 minutes or to your liking.

45 minutes at 350 for bone in, 20 to 25 minutes boneless at 305, also pork should be cooked not pink inside, save that for steak.
