I don't want a can cheese or anything like that. I'm not really a big fan of dry or bold cheese either. Any ideas?

Havarti. Eat it with a sweet cracker, it's really good!

Sharp Cheddar is very good with crackers. Also try some Kolby cheese!

alot of cheeses are great with crackers- there are so many selections!! cheddar is my fave, and it comes in sharp, extra sharp, mild, white, orange... lots of choices. swiss is good too, and [jeez] my guilty pleasure sometimes is cheez whiz. yeesh. its really gross sometimes...but... yeah.

if you are having a dinner party, a great place to go is a Wegman's market. {you know, that gihugick grocery store that is like a small village?} well, they have a cheese section and there are professionals there to help ppl like you. unfortuately i am not one of them {not THAT unfortunate, i guess} but they will help you find the PERF cheese.

its fun to taste different kinds, i guess.<3
have fun!

If you like garlic, try Boursin (it's a spreadable cheese) or if you like something with a bit more texture, try Manchego, sliced thinly.
