We keep our Bailey's in the refrigerator, but yesterday it curdled when we added hot coffee to the glass. Anyone have any answers? Can Bailey's go bad or sour? Should we not stir or shake it?

Bailey's does not have to be stored in the fridge. Although, that is where is was kept at almost every bar that i ever worked. However, it must be stored out of direct sunlight and at a constant cool temperature. (that is why fridge is best....cold and dark). Even though it does not have to be stored this way, it does not harm the liquor to do it this way.

Bailey's can in fact go bad. It only has a shelf life of about 2 years after it is made and it should be consumed with in about 6 months after opening the bottle.

It can also curdle when mixed with a weak acid like lemon or lime juice or tonic water because of the casein in the cream base. This holds true for citrus cordials as well.

If your Bailey's becomes separated or Lumpy...... trash it, it's no good anymore.

I have a bottle of Bailey's Irish Creme. It has been on my bar for well over a year. I don't refrigerate it and I don't shake it. I have never heard of it curdling. I don't know if this would make a difference but I add the Bailey's to my hot chocolate (not the hot chocolate to the Baileys). Maybe the difference is that mine is room temp. That is a great question! Try adding a splash of Bailey's and a splash of Frangelico to a cup of hot chocolate. It's the best!

Don't refrigerate Bailey's. That's probably why it curdled. If you like it cold, pour it over ice.

...it will curdle with cola (coke, pepsi) also for example. Don't need to shake Bailey's, and it would take years and years to go bad.
