I'm kinda addicted to bran muffins, so is it healthy to have half a muffin for breakfast and the other half as a snack later? Or should I be eating something more cereal-y?

you would want more protein with breakfast along with the 1/2 muffin. something like 3 egg whites and 1 yolk scrambled, etc.

each meal needs to contain either protein/carbs or protein/fats

• Raisin Bran Muffins 15 ounce box Raisin Bran 1 cup shortening 3 cups sugar 4 eggs beaten 1 quart buttermilk 5 cups flour 5 tsp baking soda 2 tsp salt Mix dry ingredients together. Poour liquid ingreients over dry and mix well. May be stored in refrigerator up to 6 weeks.Bake at 350% for about 12-15 minutes.
