BAKED SALMON FILLETS OR STEAKS

Salmon fillets, any portion size, boned and skinned
Onion powder, to taste be generous
Garlic powder, to taste be generous
Dried dill, to taste be generous
Mrs. Dash, to taste be generous
Mayonnaise
Paprika
Wash and dry fillets. Spread thin coat of mayonnaise over salmon. Spray Pam or similar product over Pyrex or tin foil pan or rectangular pan (depending on amount and size of portions).
Sprinkle seasonings over fish ending with paprika. Bake in 375 degree oven for 10 to 20 minutes or until fish flakes easily.
This recipe is wonderful used for boned and skinned chicken.

INGREDIENTS:
4 to 6 salmon steaks
1 envelope Italian salad dressing mix
1/2 cup water
2 tablespoons lemon juice
6 to 8 ounces fresh sliced mushrooms, sautéed in 2 to 3 tablespoons butter
1/4 cup grated Parmesan cheese

PREPARATION:
Arrange salmon steaks in a buttered 13 x 9 x 2-inch baking dish. Combine salad dressing mix, lemon juice, and water; pour over salmon. Cover dish with aluminum foil. Bake at 350° for 20 minutes. Top salmon with sautéed mushrooms and sprinkle with Parmesan cheese.
Continue baking uncovered for another 10 minutes.
Serves 4 to 6.

Get some Jamaican Jerk Sauce (it's a blend of spices, and stuff that resembles BBQ sauce) from the supermarket, and slather it on the salmon. Then pop the salmon in the oven. As it cooks slice up some fresh lemon. When the salmon has fully cooked... the sauce should have begun to bubble and caramelize... take it out of the oven... squeeze the lemon over it... place some fresh parsley on the edge of the serving plate along with the un-squeezed lemon slices. You could serve this along with mashed sweet potatoes.

My very favorite is Baked Salmon with hollandaise dill sauce.

To bake
Place salmon steaks in a buttered baking dish. Sprinkle a little fresh lemon over each salmon steak. Season with salt and pepper. Bake, uncovered, at 350° for about 20 minutes, or until fish flakes easily with a fork.
Meanwhile prepare your favorie homemade hollandiase sauce and add 1 sprig of fresh dill, or use a sauce mix.
Pour sauce over baked steaks and garnish with dill.

My favorites -
Place salmon steaks skin side down on a sprayed pan . Top with spicy mustard. Top with breadcrumbs. Bake at 400 for 8-12 min.
OR
Coat salmon steaks in caesar salad dressing. Make a bowl of breadcrumbs seasoned with basil and parmesan. Coat steaks with breadcrumb mixture. Bake at 400 for @10 min.

make a pouch with aluminum foil and put a little win in the bottum place the salmon in it and put lemon slices on the salmon close the pouch and cook it in the oven for 10 -15 minuts

Marinate in Italian dressing before baking. It should marinate 2 hours in the fridge. Mmmmmmm.
