Sounds like you are not mixing them well enough. ALso, when using eggs, it is always better to whip/beat the eggs seperately for "fluffiness".

If you've tried numerous recipes from different sources and they all turn out the same, I don't think it's what you're doing or the recipe you're using--it sounds like your oven temp. needs to be calibrated. It's probably 15 - 20 degrees too cool, and your cupcakes are underbaking. If you have the owners manual from your range, there are probably instructions in there somewhere how to calibrate it. If not, do a search online for your make and model and see if you can find how to that way.
As for the recipe, I can't help you there. I rarely make cupcakes, and when I do, I use a Duncan Hines cake mix. :)

Some potential reasons:
- You don't let the oven heat up long enough before you put them in, so the temperature is not right and they don't cook all the way.
- Your baking powder is old (more than 6 months old) and is not as effective at making bubbles in the dough.
- You are at a high altitude and did not correct the recipe for this.
- Perhaps other reasons. Is the batter a similar consistency to cake mix batter you have made before? If not, you might be doing something wrong with the ingredients or your mixing.

OK, your cupcakes are coming out chewy and playdouhgy because you are putting in too much liquid compared to the solid ingrediants. I would recommend to get a new recipe because if you followed that recipe correctly, then there must be something wrong with the recipe. There are recipes for really good cupckaes all over the internet. If you want a really good recipe for cupcakes go to this website and search vanilla cupcakes.

Several reasons can cause that. I would try another recipe along with not overmixing the ingredients and not over baking! Outside of those general circumstances you would have to post the recipe and the steps you use in preparing the cupcakes. Then, we could come to some kind of analysis of what went wrong!

I like to use the Betty Crocker cake mixes (white cake or yellow cake) with Betty Crocker vanilla icing . Its not a homemade recipe but its the best way to go. You can buy both frosting and cake mix for 5 bucks, they take like 2 mins to mix together, 15 mins to cook, and ALWAYS come out light,fluffy, and moist. They taste way better than anything else.

Sounds like they aren't cooked enough. Put a tooth pick or a kabob stick down the center of the cup cake and pull it out. If the stick comes out clean without any cake batter, you cooked them through. If it till comes out with batter on it, cook them a few minutes longer. In my experience, the baking time they print on the box never works. You have to use a stick. Good Luck!

Sounds like your shortening has gone bad? Does your recipe call for shortening? That might explain the repeated bad results. Throw out your shortening and buy a new one.
Assuming you're baking them long enough? Put a toothpick in one before removing from the oven. The toothpick should come out clean.

It sounds like you might be over-mixing the ingredients. Sometimes, over-mixing will toughen a dough and make it chewy instead of being tender (due to the gluten content in the flour.) If you followed the exact time guideline for mixing, and if you used an electric mixer, reduce the speed of the mixer, or mix with a wooden spoon or spatula.

VANILLA CUPCAKES
1 c. butter
2 c. sugar
4 eggs
About 4 c. sifted all-purpose flour
1 tsp. vanilla
1 tsp. ground nutmeg
1/2 tsp. soda
1 c. milk
Cream butter and sugar until well blended. Add eggs one at a time and beat well. Sift flour and add nutmeg and soda. Add to mixture alternately with milk. Add vanilla. Pour into cupcake pans and bake at 350 degrees for 30 minutes. Yield about 3 dozen.
