How to Make Peanut Butter Cookies
This all-time favorite tastes great and is easy to make. Try using "natural" peanut butter (the kind that separates - stir it together first) or crunchy peanut butter in the recipe. This recipe makes about two dozen cookies.
Things You'll Need
1/2 cup peanut butter
1/2 tsp baking soda
1/2 cup sugar
1 egg
1/2 cup unsalted butter
1/2 tsp baking powder
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 cup dark brown sugar
Instructions
STEP 1: Use a wooden spoon or electric mixer to beat the butter and peanut butter until combined, about 30 seconds. STEP 2: Add the sugars, baking soda and powder, and beat until combined. STEP 3: Add the vanilla and the egg and beat until combined. STEP 4: Stir in the flour until incorporated. The dough will become thick and difficult to work at this point; you may want to chill it for an hour or so until it's easier to work with. STEP 5: Heat oven to 350 degrees. STEP 6: Roll dough into 1-inch balls and place them a few inches apart on cookie sheets. STEP 7: Butter the tines of a large fork and use it to press the cookies flat. Make a design of perpendicular lines with the fork. Re-butter the fork as necessary. You can also dip the buttered fork into granulated sugar before pressing; some of the sugar will then stick to the cookies. STEP 8: Bake for 10 minutes or until just starting to brown around the edges. STEP 9: Remove from the cookie sheet to cool.

3/4 cup sugar
3/4 cup light brown sugar
6 ounces (1 1/2 sticks) unsalted butter, softened
3/4 cup peanut butter
2 eggs
1 3/4 cups flour
2 teaspoons baking soda
1/4 teaspoon salt
1/2 cup chocolate chips
Preheat the oven to 350 degrees F.
In a mixer with a paddle attachment, combine the sugars, butter and peanut butter. Beat until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating after each addition. Sift together the flour, the baking soda and the salt and add to the dough. Dough should be stiff enough to shape with your hands. Make 1-inch balls and place on a lightly greased cookie sheet. Gently press thumb into the balls to flatten the cookies slightly and make an indentation in the center of the cookie. Press 3 or 4 chocolate chips into the indentation.
Bake for 15 to 20 minutes, or until lightly golden brown. Remove cookies from the oven and transfer to wire racks to cool.
