Stuff that is not terribly messy, yet classy and elegant.
In the beginning of THE JOY OF COOKING, they have a section of menu ideas. For a wedding buffet, they recommend:
Hot Consomme Brunoise
Mushrooms a la Schoener
Rolled Sandwiches, Cress and Cucumber
Pastry Cheese Balls
Galatine of Turkey
Lobster Newberg in Patty Shells
Bibb lettuce salad with Sour Cream Dressing
Stuffed Endive and Olives
Macedoine of Fruits with Kirsch
Wedding Cake
Petits Fours
Spiced Nuts
Peppermint Cream Wafers

depends on how formal or informal your wedding will be and the season.
i always suggest a buffet...........it gives your guests a wide variety of choices, and usually is less expensive than a sit down dinner.
of course you would have salads - a caesar salad and a fresh tossed salad are the usual choices, but someone earlier suggested a cobb salad and that is a wonderful choice.
your main courses could be two of these choices - roast turkey, pork roast, a hearty beef dish like a stew perhaps. you could have chicken a la king, or steaks or fried chicken. generally a good lasagna goes over well with guests who don't really want meat and potatoes.
speaking of potatoes - baked potatoes as well as scallop potatoes are always good. don't forget sweet potatoes. you should have several veggies to choose from.
desserts are fun; tarts, squares, cakes, puddings, jello [yes some people do like it], pies, ice cream, fresh fruit, chocolate, fresh whipped cream and of course the wedding cake will be the centre of attention.
make sure you have a good coffee and a good tea to offer guests.
good luck and have fun with it! too many brides get so stressed out they don't enjoy themselves.

I would stick to the basics
Salad
Fruit
Grilled Chicken
Green Beans
Red Potatos
Bread
Water or Ice Tea all Around
I wouldn't make any exceptions for anyone...make the dressing on the side and if people don't want the chicken..they can eat the salad or the fruit and so be it.
Don't break your back over food if you ask me. Most people get drunk anyways and can't even remember what you served

Go for a buffet if you have a chance to... it's a lot cheaper and there's lots of choices.
However, for a sit-down, four course meal -- could depend on if you are having any ethnic foods, too. A nice homemade chicken noodle soup, caesar salad, main entree - Baron of Beef, cheesecake to follow. Don't know what you like, but I could eat all of this now. Should have had supper before I answered....

I think that you shouldn't serve anything that is considered 'heavy' ...start off with crabcakes for an appetizer, then an asian chicken salad or cobb salad- finish up with some glaze chicken dish, and dessert. enjoy!
