Was my bright to invite 3 friends to dinner and make them request anything they wanted me to cook... so by request I have to make stuffed peppers, cheesy meatballs, and nachos... what entree or side in the world will go nicely with this colorful combination??? Suggestions welcome and thank you!

Serve the Nachos with salsa as an appetizer.

The Stuffed Peppers and Cheesy Meatballs served on a bed of white rice sounds great!

You might throw in a leafy salad to complete the combo.

Veggie platter with at least five veggies and two dips...ranch and dill dips are both good counterbalacing flavors to spicy food and will go well with the cheese, too.

Try serving a soup before the entrees. You can make it a day or two ahead. Cream of tomato with a garnish of fresh Parmesan. Chocolate ice cream for dessert.

A giant tossed green salad goes with everything!
So would a big dish of buttered corn (or corn on the cob, if you can find it fresh). Hot rolls or garlic bread would round it all out!

Rice Pilaf or whatever it's called. Rice is a magical side dish. It will go great with (or in) stuffed peppers, especially if you stuff them with a meat and tomato stuffing. Rice goes really well with any meat, really. And then, rice is used in mexican dishes also. =]
