Anybody have a good recipe using regular (not the "quick cooking" kind) oatmeal/rolled oats?

I'd like any type of recipes, EXCEPT for cookies...I already have lots of those!

Blueberry Oatmeal Muffins

Oven 400F
Muffin tins-grease bottoms well

1c. Oats
1 c. buttermilk or sour milk
1c. all purpose flour
1tsp. baking powder
1/2tsp. baking soda
1/2 tsp. salt
3/4 c. lightly packed brown sugar
1 egg, beaten
1/4 c. melted butter or marg
1 c. blueberries, fresh or frozen thawed and well drained

Combine oats and buttermilk in a small bowl. Let stand. In a large bowl combine flour, baking powder, soda, salt and brown sugar. Stir well to blend. Add egg and melted butter to the oat mixture, mixing well. Add oat mixture all at once to dry ingredients. Stir just until all ingredients are moistened. Gently fold in blueberries. Fill greased muffin cups 3/4 full. Bake for 15-22 minutes. Cool muffins in the pans for 5 minutes before turning out to cool.

For cooking oatmeal, I would just follow the instructions on the side of the package. Add milk, butter, and other condiments as desired.

Below is my favorite recipe featuring oatmeal.


The Dreaded Haggis (from Delia Smith's Complete Cookery Course)
1 sheep's stomach
1 sheep heart
1 sheep liver
1/2 lb suet, fresh (kidney leaf fat is preferred)
3/4 c oatmeal
1 ts salt
1/2 ts pepper
1/4 ts cayenne
1/2 ts nutmeg
3/4 c stock
Wash stomach well, rub with salt and rinse. Remove membranes and excess fat. Soak in cold salted water for several hours. Turn stomach inside out for stuffing.

Cover heart and liver with cold water, Bring to a boil, reduce heat, cover and simmer for 30 minutes. Chop heart and coarsely grate liver. Toast oatmeal in a skillet on top of the stove, stirring frequently, until golden. Combine all ingredients and mix well. Loosely pack mixture into stomach, about two-thirds full. Remember, oatmeal expands in cooking.

Press any air out of stomach and truss securely. Put into boiling water to cover. Simmer for 3 hours, uncovered, adding more water as needed to maintain water level. Prick stomach several times with a sharp needle when it begins to swell; this keeps the bag from bursting. Place on a hot platter, removing trussing strings. Serve with a spoon.

Maple Oatmeal Bread with Almonds

Makes 1 loaf

Ingredients:

1 cup rolled oats
1 cup boiling water
1/2 cup maple syrup
1/3 cup warm water
1 envelope dry active yeast
2 teaspoons canola oil
1-1/2 teaspoons salt
1-1/2 cups whole wheat flour
1-1/2 cups bread flour
egg wash to glaze the top.
2/3 cup slivered almonds

Procedure:

In a blender or food processor coarsely chop oats. Add the boiling water and let stand until water is luke-warm.

In a bowl dissolve syrup, warm water and yeast. Add oil, salt, oats, and 1 cup of each flour, beat until smooth, add more flour to make a soft dough.

Turn out onto a lightly floured surface and knead for 6-7 minutes until smooth and elastic.

Place in a greased bowl, turning once so the top is greased too.

Cover with a towel and let rise in a warm place until dough has doubled, about an hour. If you have a bread machine, you can set it for "dough" and let it do the recipe to this point.

Punch down dough; turn out onto a floured surface. Shape into a flattened 9 inch round loaf.

Place on a greased cookie sheet.

Brush with egg wash and sprinkle almonds on top, pressing them in a little. Bake at 350 for 30 to 35 minutes.



Mom's Oatmeal Cake

1 c. oats
1 1/2 c. boiling water
1 stick butter
1 c. granulated sugar
1 c. light brown sugar, packed
2 eggs
1 1/2 c. flour
1/2 tsp. salt
1 tsp. baking soda
1/2 c. chopped nuts

Topping:

1/2 c. light brown sugar, packed
6 T. butter
1/3 c. canned milk
1 tsp. vanilla
1/2 c. chopped nuts
1 c. coconut

Place sugar, butter, milk and vanilla in saucepan. Stir in nuts and coconut. Cook over medium-low heat until butter is melted and sugar dissolved. Cook 2 minutes, then spread while hot over warm cake.

Place oats in small bowl; pour boiling water over them. Set aside to cool.

Cream butter and both sugars with eggs. Add moistened oats and dry ingredients, mixing well. Stir in nuts. Place batter in a 13x9" baking dish; bake at 350F., 35-40 minutes.


Oatmeal Pancakes

Ingredients

(10 servings)

1 1/2 c Quick cooking OR
1 1/2 c Old fashioned rolled oats
1 tb Whole wheat flour
1 tb Baking powder
1 1/2 c Skim milk
2 Egg whites
1 tb Vegetable oil


Instructions

In blender,process dry ingredients until oat flakes are fine; transfer to medium bowl.Mix liquid ingredients lightly in small bowl;add to dry ingredients.Stir only until dry ingredients are moistened.Let stand 5 minutes.Preheat griddle.Bake on hot griddle, turning with spatula when edges get firm.Makes 10 medium pancakes.



Oatmeal Blueberry Muffins

Ingredients

(12 servings)

1 1/4 c Oatmeal
1 1/4 c Flour
1/3 c Sugar
1 tb Baking powder
1/2 ts Salt
1 c Milk
1/4 c Vegetable oil
1 Egg; beaten to blend
3/4 c Blueberries
2 tb Sugar
2 ts Cinnamon


Instructions

Preheat oven to 425. Lightly grease 12 muffin cups, or use paper liners. Combine first five ingredients in large bowl. Mix milk, oil and egg in another bowl. Add to the oatmeal mixture and stir just until moistened. Fold in blueberries. Divide batter among muffin cups. Combine 2 Tbsp sugar and 2 tsp. Cinnamon. Sprinkle over muffins. Bake until tester inserted in center comes out clean. About 15 minutes. Remover from cups. (These can be prepared 1 day ahead. Store in an airtight container). Serve warm or at room temp. Shall we dip these in chocolate?

Dutch Apple Pie with Oatmeal Streusel

INGREDIENTS
1 (9 inch) pie shell
5 cups apples - peeled, cored and sliced
2 tablespoons all-purpose flour
2/3 cup white sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
2 tablespoons butter
3/4 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/2 cup packed brown sugar
3/4 cup rolled oats
1 teaspoon lemon zest
1/2 cup butter

DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C). Fit pastry shell into pie pan and place in freezer.
To Make Apple Filling: Place apples in a large bowl. In a separate bowl combine 2 tablespoons flour, white sugar, 1/2 teaspoon cinnamon, nutmeg, and allspice. Mix well, then add to apples. Toss until apples are evenly coated.
Remove pie shell from freezer. Place apple mixture in pie shell and dot with 2 tablespoons butter or margarine. Lay a sheet of aluminum foil lightly on top of filling, but do not seal.
Bake in preheated oven for 10 minutes.
While filling is baking, make Streusel Topping: In a medium bowl combine 3/4 cup flour, 1/2 teaspoon cinnamon, brown sugar, oats, and lemon peel. Mix thoroughly, then cut in 1/2 cup butter or margarine until mixture is crumbly. Remove filling from oven and sprinkle streusel on top.
Reduce heat to 375 degrees F (190 degrees C). Bake an additional 30 to 35 minutes, until streusel is browned and apples are tender. Cover loosely with aluminum foil to prevent excess browning.


Oatmeal Pie Recipe

INGREDIENTS:
3 eggs, beaten
3/4 cup granulated sugar
3/4 cup light brown sugar, packed
1 cup plus 2 tablespoons light corn syrup
3/4 cup heavy cream
6 tablespoons butter, melted
1 1/2 cups flaked coconut
1 cup + 2 tablespoons uncooked rolled oats
2 teaspoons vanilla extract
1 10-inch prepared deep-dish pie shell, unbaked
PREPARATION:
In a large mixing bowl combine eggs, sugars, corn syrup, cream, butter, coconut, oats, and vanilla; mix well. Pour filling into the prepared pastry shell. Bake at 350° for 45 to 55 minutes, or until browned and set.
Makes 15 servings.

you could make a crisp using any fruit. mix butter, brown sugar and Cinnamon and oatmeal. mix that together. place the fruit on the bottom of the pan and mixture on top and bake

Me...No I don't have a recipe...But....hehe....you can go to "www.Christmas-cookies.com" and search "Oatmeal, or Oats" and you will get like 4,0000 recipes that have oats in them!!!

Use it instead of bread (or whatever you use) in your meatloaf--my family LOVES it.
