Why are forged steel knives considered better than stamped steel knives?

it's in the process the metals are made. Forged steel works the steel and makes it stronger/tougher than a standard stamped steel blade

Working the Steel while forging can "align" the grain of the steel making it much Stronger and More Durable.

Also if it is folded when it is forged it becomes a laminate which makes it much tougher.
