Oatmeal Pancakes Recipe
Serves/Makes: 4
Ingredients:
2 cups buttermilk
2 cups oatmeal
2 well beaten eggs
1/2 cup flour
1 teaspoon baking powder
1 teaspoon salt
2 tablespoons sugar
4 tablespoons melted butter
Directions:
Soak oatmeal in the buttermilk. Add well beaten eggs. Sift together flour, baking powder, salt and sugar. Add buttermilk mixture and melted butter. Cook on hot griddle.

Hi! Pancakes are one of my favorite breakfast foods. This recipe is quite foolproof, which I've found to be helpful. My little brothers like chocolate chips or M&M's in these pancakes.
Just make sure that your pan isn't too hot. Medium or medium/high heat works well for me.
INGREDIENTS
2 cups milk
3/4 cup white sugar
2 eggs
1 teaspoon vegetable oil
1 teaspoon vanilla extract
2 cups all-purpose flour
1 1/2 tablespoons baking powder
DIRECTIONS
Place milk, sugar, eggs, oil and vanilla in the blender. Add flour and baking powder. Blend until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Heck those ones are so much more complex then pancakes have to be.
I never use a distinct recipe but I got this from my mum, they are savory pancakes but still go brilliantly with sweets but also go well with savory toppings
1to 2 eggs depending on how much you want to cook (if you eat like my family (roughly 1 egg per 2 people)
a good pinch of salt
add to it and mix til you get the ammount of mixture flour (50:50 mix of plain and SR or how you prefer)
(50:50 milk and water i usually go a bit heavier on the milk)
an electric beater to mix the lot together is quicker and easier but use a fork and you will get there
makes good sized pancakes and cook using butter in the pan not oil or margarine, tastes so much better.
My Wife and Mother in Law were dubious of this recipe too then I made it one time and they loved the pancakes from it
a great topping to go with this is a little grated cheese, some shaved ham, some capsicum and some tomato with cracked pepper fold it in half then microwave til chese is just melted

Blueberry Gingerbread Pancakes
Ingredients:
2 cups flour
1 1/2 teaspoons baking powder
1 1/4 teaspoons ground ginger
3/4 teaspoons pumpkin pie spice
1/4 teaspoons baking soda
1/4 teaspoons salt
3/4 cup light molasses
3/4 cup buttermilk
2 eggs
3 tablespoons vegetable oil
2 cups blueberries
additional vegetable oil
butter and maple syrup
Preparation:
Mix first six dry ingredients in medium bowl and blend well.
In a large bowl, whisk molasses, buttermilk, eggs and 3 tablespoons vegetable oil. Add dry ingredients and whisk just until smooth. Fold in blueberries.
Brush nonstick skillet with vegetable oil. Allow 3 tablespoons batter for each pancake. Cook about a minute and a half on each side. Keep warm in 200 degree oven. Serve with butter and maple syrup.

Sweet Potato Pancake Recipe
1/2 cup mashed sweet potatoes, cooled
1 1/2 tsp melted butter
1 med egg white, lightly beaten
3/4 cup 2 percent milk
1/4 cup whole wheat flour
1/2 cup all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1. In medium bowl, combine sweet potatoes, butter, egg white, and
milk. Beat until blended. Add flours, baking powder, and salt.
Stir until smooth.
2. Lightly coat griddle or large sauté pan with canola oil. Place
on burner over medium heat until hot. Pour ¼ cup batter on griddle.
Cook until top of each pancake is covered with tiny bubbles and
bottom is golden brown. Turn, and brown other side.
Makes 4 Servings

My friend makes the best pancakes in the world!
All she does is add a little bit of vanilla, brown sugar and cinnamon to the pancake batter.
Trust me, they're delicious!

hi! here's mine:
1 3/4 cup milk
1 squirt lemon juice (maybe a T?)
***********let sit in bowl while you do the rest*************
2 c all-purpose flour
2 T sugar
4 t baking powder
1 t salt
*****************whisk together******************
add to milk:
1/3 c. oil
1 egg
****************whisk together****************
make sure your pan is already hot....water sizzles on it.....
add wet ingredients to dry ingredients...whisk it together just til you've spread around the wet ingredients, there will be lumps, just make sure they aren't huge.......but don't whisk too much, you don't want it smooth because then your pancakes will not be tender.
