A slightly complicated option is to mix a tub of Tofutti "Better than Sour Cream" with a packet of Fantastic Foods "Onion soup & dip"; Vegan and addictive.

Easier options...

Nuke them for a few seconds, they're *much* better warm.

Dust them with powdered herbs, they stick better to the warm ones.

Put them *in* a sandwich! It adds a lot more flavor and texture to a sandwich than you think! It also has the added benefit of drives people crazy!! I've been doing this with chips since I was a kid and I still don't understand why folks get disturbed seeing you put the chips inside the sandwich. But I have noticed that once they try it, they like it. '-)

here is a recipe that is good..

Potato Chip cookies

1 cup shortening
1 cup brown sugar
1 cup granulated sugar
2 eggs
2 cups flour
1 tsp baking soda
1 tsp vanilla
1 cup potato chips, crushed
¾ cup chopped nuts

Cream shortening, sugar and eggs until creamy. Add remaining ingredients; mix well. Drop from a teaspoon onto lightly greased cookie sheet. Flatten with spoon or fork dipped in hot water. Bake in a 350 degree oven for 10 to 15 minutes. Makes 4 ½ dozen. (They taste good like pecan sandies).

If I read your Question correctly, your Mom is the one purchasing/providing the potato chips. Well, a thought springs to mind: go buy your own, whatever flavor you want!

Alternately...I don't know of anything that you can add to, or sprinkle on, potato chips to make them more exciting. But there are plenty of choices when it comes to dips...some are even healthy! Like, instead of the "classic" french onion dip, try mixing a packet of dry onion soup mix with plain, lowfat (or nonfat) yogurt, instead of sour cream or mayonnaise.
