I want to make an authentic bolognese sauce from Italy (not the American tomato-based variety), but the recipe calls for minced meats and pancetta (Italian streaky bacon).

I DON'T want to use ground beef and pork, as these are substantially more greasy and the sauce won't be as good. And I have no idea where to get pancetta. Could someone tell me where I can find these meats in West Los Angeles?

Maybe an Italian butcher or the like? Any help you can give me would be greatly appreciated!

If you have a food processor you can mince the meat yourself in it. Taditional pancetta is not smoked either as is it's north american brother "bacon". So do not use bacon in substitution of the pancetta.
