Weekend Breakfast Burritos
Yield: 6 Servings
Ingredients
1 tb butter or margarine
8 eggs; beaten
1/4 ts pepper
2 c diced Canadian bacon
6 8-inch flour tortillas
1 1/2 c shredded Cheddar cheese
Instructions
1. Heat oven to 400 degrees. Melt butter in large skillet over medium-high
heat. Add eggs, pepper, and bacon; cook and stir about 5 minutes or until
eggs are firm but moist.
2. Spoon egg mixture evenly onto each tortilla. Top each with 1 tablespoon
cheese. Roll up tortillas tightly. Place, seam side down, in ungreased 13 x
9-inch {3-quart} baking dish. Sprinkle remaining cheese over tortillas.
3. Bake at 400 degrees for 10 to 15 minutes or until cheese is melted. If
desired, serve with sour cream and salsa.
* While the burritos bake, assemble bowls of chopped green chiles, salsa,
and
sour cream.
SERVING SUGGESTION: To complete the breakfast or brunch menu, serve the
burritos with jalapeno corn muffins, cut-up fresh fruit, mixed fruit
juices,
and coffee.

Breakfast Burrito Filling
6 servings 20 min 5 min prep
2 cups cubed cooked potatoes
1 small onion, chopped
1/2 green pepper, chopped
1 clove garlic, chopped
1/2 cup ham or bacon or beef or pork, cooked and chopped
3 large eggs
2 tablespoons milk or water
1 tablespoon margarine or butter
Brown the potato, onion, pepper, and garlic in the skillet (until the vegetables are tender).
Add the meat and heat until the meat is heated through.
Mix the eggs with milk or water, and pour over the meat and veggies.
Cook, stirring, until the eggs are done.
Spoon into flour tortillas, along with 1 tablespoon of grated cheese per tortilla.
Serve with sour cream and salsa on the side.

4 ounces breakfast sausage
1 tablespoon minced white onions
1/2 tablespoon minced mild green chilies (canned)
4 eggs, beaten
salt
pepper

4 slices American cheese
Preheat a skillet over medium heat.
Crumble the sausage into the pan, then add the onion.
Sauté the sausage and onion for 3 to 4 minutes or until the sausage is browned.
Add the mild green chilies and continue to sauté for 1 minute more.
Pour the beaten eggs into the pan and scramble the eggs with the sausage and vegetables.
Add a dash of salt and pepper.
Heat up the tortillas by steaming them in the microwave in moist paper towels or a tortilla steamer for 20 to 30 seconds.
Break each slice of cheese in half and position two halves end-to-end in the middle of each tortilla.
To make the burrito, spoon 1/4 of the egg filling onto the cheese in a tortilla.
Fold one side of the tortilla over the filling, then fold up about two inches of one end.
Fold over the other side of the tortilla to complete the burrito (one end should remain open).
Serve hot with salsa on the side, if desired.
Repeat with remaining ingredients.
Makes 4 burritos.

I like to make burritos with fried potato ( i cube the potato then fry it in oil, maybe with onions), scrambled eggs, sausage or bacon, cheese, salsa, olive, and cilantro. Sometimes black beans.
Just put all the ingredients in a warm flour tortilla. Sometimes i make a bunch of these then freeze them, they heat up in 1 or 2 mins in the microwave. You just can't add the salsa ahead of time because it'll be watery when you reheat it

Cook a peeled potato in the microwave and let it cool so you can slice it. Cook bacon (I like turkey bacon less fat) and then saute some onions and sausage in a skillet with some oil or butter - add two beaten eggs with a little milk added and put the potatoes in the pot - stir is around until it is done then assemble the warm flour tortilla (warmed in the microwave in a plastic bag with cheese, salsa, whatever you like. I like to add grated cheese and sometimes I put cilantro and chopped Jalapenos.

scrable eggs, heatup leftover meat from fridge, warm tortilla, put stuff in tortilla add cheese into tortilla.
I like egg, chorizo, cheese, beans, hot sauce, and lettuce in mine.
