Here's a recipe that I am NOT copy & pasting from anywhere...it's my very own. It's a little non-traditional (yogurt is subtituted for the usual buttermilk), but I think it's awesome.
-3 cups all-purpose flour
-1/2 cup brown sugar, packed
-1 1/2 cups plain yogurt
-2 eggs
-2 teaspoons baking powder
-1 teaspoon baking soda
-(optional) 1/2 cup raisins, soaked in water for 15 minutes, then drained
Preheat the oven to 350 degrees. In a large bowl, combine the yogurt and sugar. Whisk until the sugar is dissolved, and no lumps of sugar remain. Add the eggs, and stir to combine.
Add the flour, salt, baking powder, baking soda and (if you're using them) raisins. Use a rubber spatula to thoroughly combine the ingredients. The dough will be about the consistency of peanut butter.
Pour the dough into an oven-safe, heavy cooking pot which has a tight-fitting lid. A 3-quart pot is perfect. Bake at 350, WITH THE LID ON, for 20 minutes. Then, after 20 minutes, remove the lid, and use the tip of a knife to slice a small "X" in the very center of the top of the loaf. Return the pot to the oven (with the lid OFF). Bake for another 40 minutes.
The top of the bread should be a deep, golden brown. Allow the loaf to cool inside the pot for about 15 minutes, then carefully turn the pan over. The loaf should fall out easily.
--I make mine WITH the raisins. Smear some cream cheese on it, and it's incredible.

INGREDIENTS
3 cups all-purpose flour
1 tablespoon baking powder
1/3 cup white sugar
1 teaspoon salt
1 teaspoon baking soda
1 egg, lightly beaten
2 cups buttermilk
1/4 cup butter, melted
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5 inch loaf pan.
Combine flour, baking powder, sugar, salt and baking soda. Blend egg and buttermilk together, and add all at once to the flour mixture. Mix just until moistened. Stir in butter. Pour into prepared pan.
Bake for 65 to 70 minutes, or until a toothpick inserted in the bread comes out clean. Cool on a wire rack. Wrap in foil for several hours, or overnight, for best flavor.

I think the main difference is that we use buttermilk instead of ordinary milk.
