Well, I like to mash up my bananas, and after I have measured out the right amount, put them in baggies and freeze for the time when I want to make banana breads.
I have also tried the peanut butter sandwich and banana which I admit I really, really like!
Banana waffles or pancakes are always a favorite.
I also freeze banana chunks and have them on hand for a quick pick me up drink mixed in with orange juice or add yogurt, honey, ice cubes, banana and make a smoothie.
You can also dress up your vanilla ice cream by mashing in your banana (like Cold Stone ice creamery) add some choc chips, nuts, whatever and make your own banana ---something.

French Banana Pancakes
Pancakes:
1 cup all-purpose flour
1/4 cup confectioners sugar
1 cup milk
1 teaspoon vanilla extract
2 eggs
3 tablespoons butter or margarine, melted
1/4 teaspoon salt
Stir flour and confectioners sugar into mixing bowl. Add milk, eggs, butter, vanilla, and salt; beat until smooth. Heat a lightly greased 6" skillet; add about 3 tablespoons batter, spreading to almost cover bottom of skillet. Cook until lightly browned, turn and brown the other side. Remove to a wire rack. Repeat with remaining batter, greasing skillet as needed.
Filling:
1/4 cup margarine
1/4 cup packed brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup light cream
5-6 bananas, halved length wise
whipped cream, additional cinnamon
Melt butter in a large skillet. Stir in brown sugar, cinnamon, and nutmeg. Stir in cream and cook until slightly thickened. Add half of the bananas at a time to skillet; heat for 2-3 minutes, spooning sauce over them. Remove from the heat. Roll a pancake around each banana half and place on a serving platter. Spoon sauce over pancakes. Topped with whipped cream and a dash of cinnamon if desired.
Yield: 10-12 pancakes

Melt butter in a skillet, stir in some brown sugar, then turn up the heat and fry the bananas in the mixture. Serve with a good quality vanilla ice cream.

peal bananas and slice in half
put 1/4 cup brwn sugar and 1 stick butter in a pan
throw in bananas and add 1 tad of myers dark rum
pour into bowls add ice cram scoop and ladle over sauce from pan
I call it Bad Bananas foster!

you're really not going to believe this, but any backyard bbq type salad (potato salad, macaroni salad, coleslaw, jell-o salad, carrot & raisin salad, etc.) are made sssoooooo much better with the simple addition of a mashed banana to the dressing its in. Try it! It doesn't seem like it would work(I thought it was gross when I heard of it) but it gives it a little naturally sweet hint without making it into a sugary sweet type dish. Hope this helps (=

Pie! Get a box of vanilla wafers and make a pie crust from them like you would a graham cracker crust. Buy two boxes of vanilla pudding, mix according to package directions and stir in the sliced bananas; pour into firm pie crust and chill. Serve with whipped topping of choice. Fast, easy and yummy!

Grilled Banana Split Sundae with chocolate sauce
4 firm, but ripe, bananas, unpeeled
1 tablespoon sugar
1/2 teaspoon cinnamon
8 small scoops best-quality vanilla ice cream
Bittersweet Chocolate Sauce, recipe follows
1/2 cup coarsely chopped pecans or walnuts, toasted
Whipped cream, optional
Maraschino cherries or strawberries, optional
Build charcoal fire or preheat gas grill.
Slice bananas in 1/2 lengthwise and crosswise so each banana yields 4 pieces. Set aside. Mix the sugar and cinnamon, sprinkle on cut sides of bananas. Let bananas sit for 5 minutes.
Place bananas cut-side down on a clean cooking grate over direct low heat. Cook for 2 minutes or until grill marks appear. Using a pair of long-handled tongs, turn over and let cook 5 more minutes or until the skin pulls away from the banana.
Remove skins from banana halves and place 4 banana halves in the bottom of each serving bowl. Top each serving with 2 scoops of ice cream. Ladle about 1/4 cup of heated chocolate sauce over each sundae—let your taste determine the quantity here, add just a touch for a hint of chocolate or pour it on for a serious chocolate fix. Sprinkle each with 1 tablespoon of chopped nuts, top with whipped cream, and place a cherry or strawberry on top.
Bittersweet Chocolate Sauce:
8 ounces bittersweet (70 percent chocolate (chips or chopped block chocolate)
1/3 cup heavy whipping cream
2 tablespoons sweet cream butter at room temperature
2 tablespoons superfine sugar
1/8 cup liqueur (either Kahula, Frangelico or Chambord)
1/2 teaspoon vanilla extract
Make the chocolate sauce up to 2 days in advance. Place chocolate in a medium size metal mixing bowl. Heat cream to almost boiling, add butter and sugar and stir to combine. Remove from heat and pour over chocolate. Whisk vigorously until melted, and well combined. Add liqueur and vanilla and stir constantly until mixture is cool the touch. Cover with plastic wrap and set aside or refrigerate up to 2 days. Warm before serving.
Yield: about 1 cup
