Have a fruit tree where kids hang up construction paper cut outs of fruit for every serving of fruit they ate each day. Encourages healthy eating too. :)

Depends on the age, but since you are under the preschool category, here are some suggestions (can be modified for 2s, 3s or 4s): My favorite is to use the kids' artwork for the majority of the decoration and display it neatly & creatively.
I think picking one fruit and using it as a main theme works well.

"Fruit of the 'Room'"
"bananas about school"
"apple of my eye"
"it's grape to be 3 (or 2 or 4...)"
"keep our classroom 'Peachy' clean"
"Watermelon Crawl(ers)"-great for 1 year olds
"Berry Fun"
"mango tango"-dancing time
"care pears"--use for character building

other fruits: strawberry pineapple blueberry orange
cranberry tangerine plum nectarine

Have lots of fruity fun!
You can find lots of ideas on the web. Search for things like:
preschool lesson plans, classroom decorating, etc.
Good Luck and TAKE CARE OF THOSE MUNCHKINS!

If you mean a k-5 grade classroom, you could use the alphabet. Make a chart showing fruits that start with each letter.

posting 1-10 (or 20, if can) of cut out fruits on the wall. like in a cutout basket, there's 1 apple then in another basket there are 2 mangoes, then another with 3 oranges, etc etc.

There's colors, number line, sequencing, counting. :)

or you could make this into a game (we did this for one of my classes), in other to make a "fruit salad", you (the buyer/s) must go around the room with a list indicating what fruits the student/s must buy to make a "fruit salad", so for example, apple, for the student/s to get an apple, exchange the teacher/another student (the seller) with 1 square cut out, and 2 circle cut outs (for example only).

(the student/s will be given enough cut outs to complete all the required fruits for the "fruit salad", but there also could be excess cut outs, so there'll be room for mistakes. :) )

there is money concept in it without really touching money.

A fruit tree would be nice, but a CHICKA CHICKA BOOM BOOM TREE, and a CHICKA CHICKA 1,2,3 TREE would be even cooler. They are both fruit trees, and the kids can make (depending on age) and decorate the ABC's and 1,2,3's to hang from the trees. There are also many activities that you can use to enhance the learning process and make you look good when you are being evaluated. email me if you want more suggestions.
