Hot Chicken Sandwiches

This is a good sandwich when there is a crowd expected. You can also freeze the filling for later use.

List of Ingredients

4 oz. Cream Cheese - very soft
1 c. Cream of Chicken Soup
1 sm. diced onion
1 to 1-1/2 lbs deboned cooked chicken or turkey
sandwich buns

Instructions

Add chicken soup to the cream cheese a little at a time and mix together well.

Add onion and chicken and mix.

Place 1 to 1-1/2 tbsp of mixture on bun and wrap in foil.

Bake 20 minutes at 375°


Yields 20-24 sandwiches

Throw the whole thing in a pot with some water, and let it simmer for a couple of hours. That will make a good base chicken broth. Then remove the bones and skin, or you can do that to start since your roast is already cooked.

But definitely throw the bones in there, it'll make a tastier broth.
Once that's done, add whatever you want. If you want classic chicken noodle, add carrots, celery, onion, salt, pepper, a bay leaf, any spice you want.

Then when it's done add egg noodles or whatever you prefer, and cook those, and whala it's ready.

A good thing to eat a few days in a row!

Chicken and rice

Can use yellow or white rice ( yellow adds more flavor)
1 can mix veggies - drained
1 can cream chicken soup
chicken - deboned - cut into small pieces

Cook the rice according to the package directions (use a larger pot to have mixing room)

Heat soup with 3/4 can of water (can be done in microwave) mix to thin out lumps

When rice is done add in drain veggies, chicken, and soup. Mix well. Simmer additional 10 minutes.

This recipe is with 1 to 1 1/2 cups of rice - always can add more veggies if desire.

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

With chicken you can do a lot try to make some chicken soup. One good recipe I love and my family makes is broccoli and rice cheese casserole . Use your chicken add it to that you can get the recipe from the Campbell's can or website. Hope you find something you like.

I would make a chicken wrap and add green pepper, celery, onion, dressing, lettuce, tomatoe or turn the left overs into a chicken salad.

I would do the chicken salad. Get some fresh bread and chips and have a great sandwich. Don't forget your favorite soft drink!
