Yogurt Crunch Parfait
INGREDIENTS
1 (8 ounce) container BREYERS Lowfat Yogurt, any variety
1 (8 ounce) container COOL WHIP FREE Whipped Topping, thawed, divided
1 banana, sliced
1 (20 ounce) can pineapple chunks, drained
1 cup POST SELECTS BANANA NUT CRUNCH Cereal
DIRECTIONS
Stir yogurt and 1/2 of the whipped topping in large bowl until smooth. Alternately layer yogurt mixture, bananas, pineapple chunks, cereal and remaining whipped topping in 6 parfait glasses; repeat layers.
Sometimes i add strawberries, blueberries and raspberries as well and it turns out just wonderful! Hope you enjoy!

ha!! thats what i had for luncH!
strawberries, blueberries (any fruit pretty much: peaches, ect.)
yogurt (vanilla is really good, or strawberry)
granola (i used almond & cranberry granola)
~mix together and enjoy. dont wait to long or the yogurt will make the granola soggy.

Mocha Yogurt Parfait
Ingredients:
1 envelope unflavored gelatin
1/3 cup cold water
3 tablespoons Dutch process cocoa or unsweetened cocoa
16 ounces coffee low-fat yogurt
2 egg whites
1/3 cup sugar
***CHOCOLATE CRUNCH***
1/4 cup all-purpose flour, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 tablespoons all-purpose flour
1/4 cup regular oats -- uncooked
1 tablespoon sugar, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
1 1/2 teaspoon sugar
1 tablespoon Dutch process cocoa or unsweetened cocoa
3 tablespoons unsalted margarine -- melted
1 tablespoon water
Directions:
Soften gelatin in cold water in top of a double boiler; cook over boiling water until gelatin dissolves, stirring constantly. Stir in cocoa, and cook until cocoa dissolves. Remove from heat, and cool to room temperature. Fold in yogurt. Chill until mixture reaches consistency of unbeaten egg white.
Beat egg whites (at room temperature) in a large bowl until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating until stiff peaks form. Fold yogurt mixture into egg whites.
Spoon alternate layers of yogurt mixture and Chocolate Crunch into individual parfait glasses. Chill 3 to 4 hours.
Chocolate Crunch: Combine first 4 ingredients. Sprinkle margarine and water over dry ingredients; mix well. Spread in a 9-inch square baking pan. Bake at 450 for 8 to 10 minutes or until crunchy; stir once. Cool completely.

White Chocolate Peach Parfait
Ingredients:
8 Squares white chocolate, chopped
1 1/3 cup Light sour cream or plain yogurt
2 2/3 tablespoons Lime juice
2/3 cup Whipping cream
10 2/3 Peaches
1 1/3 cup Blueberries
Directions:
In bowl over saucepan of hot water, melt chocolate. Combine sour cream with lime juice; stir in chocolate. Chill for 30 minutes. In separate bowl whip cream to soft peaks; fold into chocolate mixture.
Plunge peaches into boiling water for 30 seconds; peel and slice. Set aside 1/4 cup of blueberries. Layer peach slices and remaining blueberries, beginning and ending with mixture. Garnish with reserved blueberries. Chill up to 2 hours.
