INGREDIENTS
1 can yams, drained and mashed
1/2 cup margarine, melted
2 teaspoons cinnamon
2 teaspoons ginger
2 teaspoons nutmeg
1/4 cup brown sugar
1/2 cup honey
1 can pineapple bits
1 cup pecans
miniature marshmallows
DIRECTIONS
Put mashed yams in casserole. Mix together margarine, cinnamon, ginger, nutmeg, brown sugar and honey.
Mix in yams with pineapple bits and pecans.
Top with miniature marshmallows.
Bake at 325 degrees until heated through and marshmallows are bubbly.
Note: You may want to cut back on the ginger, I only used 1 teaspoon.

The canned yams aren't as good as fresh so use that only if you don't have fresh available. I've noticed that a lot of people have suggested peeling, chopping and boiling them. You can do it that way, but you will lose a lot of flavor into the water. The best way is to bake them in a very hot over. It takes about an hour for a large potato to cook through. They are done when you give them a squeeze and they are completely soft. For Thanksgiving, I usually bake the potatoes the night before and then cut them open and scoop out the flesh. If they seem a little stringy, just take a knife and make lengthwise and crosswise cuts in it before youo scoop it out. Then reheat in the microwave. I add butter, cream, brown sugar, and pumpkin pie spice (because it contains all the spices I would use individually). I also add a little vanilla and two eggs. The eggs will thicken it. Only use the eggs if you are making sweet potato casserole. If you are just serving it mashed, leave them out. For sweet potato casserole, put the mashed sweet potatoes into a baking dish. Mix together 3 tablespoons flour, 3 tablespoons melted butter, 3 tablespoons brown sugar and 1/3 cup chopped pecans. It's easiest to use your hands to make sure everything is combined well. This can easily be doubles if you want more topping. Just scatter the topping over the mashed sweet potatoes and bake for 30 minutes at 350 degrees. If you don't want to take the time to bake the sweet potatoes, you can peel and chop the sweet potatoes and put them in a pan with some butter. Cover very loosely with foil. Push the foil into the pan so it is almost touching the potatoes, but lets the steam come out around the sides of the foil. Keep the heat at medium and stir every now and then until it is cooked through. If you do it this way, just omit or reduce the amount of butter when you mash the sweet potatoes. Using this method will take less time than baking and you won't lose the flavor and nutrients that you do with boiling in water.

OH, I know this one.....
My mom had the best recipie and its easy.......
basically it really depends on how many people your cooking for, but lets say 4....
6 medium size yams
-cut how u please, with or without skin (I like rounds with skin about 1/2 inch thick)
-spread them out evenly in a baking dish
-scoop small amounts of butter (teaspoon size)and place on the yams in random spots...about 4-6 spots
-sprinkle with your desired amount of brown sugar...about 1/3 a cup or more if u like them a little sweeter
-them sprinkle with cinnamon...not too much as cinnoman is strong and u dont want to ruin them
Bake on 350 F covered for 30 min them check for tenderness, if not ready cook for another 10 min. stir and serve...Add cinnamon sticks for decoration
i know there isnt exact mesurments of what to use, but that is the best way to make these...its all about your desired taste...there pretty easy to cook and pretty impossible to mess up....I hope this helps and good luck....
ps...u can also add cloves or nutmeg for extra flavor

Candied Yams
6 medium yams cooked and sliced lengthwise, or 2-16 ounce cans whole yams, drained
1/2 cup packed brown sugar
1/2 dark corn syrup
1/4 cup butter
Preheat oven to 350
Arrange yams in cook and serve baking dish.
In a small saucepan over medium heat, combine brown sugar, corn syrup, and butter; heat mixture to boiling; reduce heat to low and simmer, stirring occasionally, 5 minutes. Pour mixture over yams and bake for 20 minutes or until yams are well glazed, basting often.
add any of these to taste: cinnamon, cloves, nut meg

this is the way i make them. i like them to be pretty sweet.
boil the yams until fork tinder. in a bole mix 1/4 cup of sugar,1/4 cup of brown sugar, 1 tablespoon of cinnamon,1 tablespoon of nutmeg. then yams are done
then run under cold water until cool to the touch, cut in about half an inch slices, layer in a 13 by 9 pan, lay out first layer of yams in a even layer and top with mixture and butter cut up in pieces, lay our another layer of yams, top with mixture and butter. continue until all yams are in pan. pour about 1/2 cup of water in the pan. don't pour water over the yams but down the side of the pan.
place in a 375 oven, bake for 45 mins basting every 15 mins

1 1/2 cups miniature marshmallows
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
Place sweet potatoes in a medium baking dish. Distribute butter pieces evenly over the sweet potatoes. Sprinkle with brown sugar. Layer with miniature marshmallows.
Cover and bake in the preheated oven 25 minutes, or until sweet potatoes are tender and marshmallows have melted.

Buy the ones in the cans put them in a baking dish sprinkle with Cinnamon and brown sugar and maybe little marshmallows and pecans or walnuts then dot with butter - bake until bubbly.
