the easiest way is to take the clove, I'm assuming it's not peeled. smash it with the flat side of your knife. you should then be able to just slip the peel right off. then, cut off the woody end of the clove. I'm assuming you're using a chef's knife for this. flip it upside down, so that the sharp part of the knife is in the air, and the blunt part is on the cutting board. cut the garlic with the blunt part. you'll see, it basically minces it just like this. you may have to pass your knife over it once or twice, but it's just about done. don't use any salt, and my god, don't use a damn garlic press.

About the same way you mince anything, like an onion. First, hit the clove HARD with the side of a chef's knife to get the peel off easily. Then lay the clove down on it's "belly" and slice thin strips from the blossom end to, but no through, the root end. Then do the same across the top. Then chop it thinly across and you will come out with a mince. Another way is to just cut it up into Small chunks, and if you have a good, sharp knife, place the tip of the knife on the cutting board and use an up and down motion over and over the pieces until they are minced. This method is actually the one I prefer, and it's the best way if you're "mincing" many cloves of garlic.

I have a special tool from IKEA. It pushes the clove through a bunch of little holes. A garlic press I think it's called.

Smash it with the edge of a knife, then use the knife to cut it up finely. Then put a bit of salt on it and use the edge of the blade to really smoosh it. Or put it through a garlic press.
