hi i need some help please? i was wondering if anyone had any ideas what an amazing dessert would be to make for a professional cooking competition? it has to be done within 40 minutes but has to be really amazing! I can't to small cakes or biscuites :( Thanks in advance!
Also i need to know where i can get the recipe from!

I always found fruit en pappillotte went down very well in the restaurant I cheffed in.
Take whatever fruit is in season and chop. Add appropriate seasoning - for instance rhubarb is in season at the moment nd goes wonderfully with lime and ginger, apple with raisins and spices (you can get some lovely moscatel raisins on the vine form speciallist supplier), or look for the very first berries coming through and do them with some black pepper. Add some balsamic and a good shake of icing (confectioners) sugar. Put a good dessertspoon of the (raw) fruit mixture into a square of greasproof paper. Either fold or I like to tie mine up with string like old fashioned 'money bags'. Bake in the oven for twenty minutes. The diner opens the bag and releases the lovely fruity, spicy aroma.
In winter I serve these with a toffee sauce and ice-cream/chantilly cream but a lghter summer style dessert benefits from a citrus sauce and some tuille biscuits.

This is simple and quick, but is very unique and has an amazing depth of flavor. It is phenomenal.
Maui Madness
1/3 cup macadamia nuts -- coarsely chopped
2 tablespoons unsalted butter
4 slices fresh pineapple
1/4 cup molasses
2 tablespoons dark rum
1 tablespoon lemon juice
1 pint coffee ice cream
Lightly toast the nuts in a small dry skillet over medium heat, stirring, until they are golden and fragrant, about 2 minutes. Immediately remove from skillet to prevent burning.
Melt the butter in a medium skillet and cook the pineapple over medium heat, turning once, until tinged with gold, about 2 minutes per side. Stir in the molasses and simmer, spooning the sauce over the fruit, for 3 minutes. Transfer the pineapple to 4 shallow dessert bowls.
Add the rum and lemon juice to the skillet and simmer, stirring, until slightly thickened, about 2 minutes.
Place a scoop of the ice cream on each pineapple slice. Spoon the sauce over the ice cream. Sprinkle with the nuts and serve immediately.

lemon Syllabub
1/2 pint double cream
1/4 pint sherry
2 tbs brandy
2 lemons
packet ginger biscuits
dozen seedless grapes
crush the ginger biscuits and line 4 dessert dishes with them.
Whip the cream, add the sherry, brandy and whisk together. add grated rind of the two lemons. mix in the seedless sliced grapes.
divide mixture between the dishes. garnish with grated lemon zest.
this is a rich but delightful dessert especially for a dinner party.

Caramel Apple Cookie Dessert
INGREDIENTS
3 Red Delicious apples - peeled, cored and sliced
2 cups apple juice
1 (18 ounce) package refrigerated sugar cookie dough
3 tablespoons white sugar
1 (18 ounce) container caramel dip
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease a cookie sheet.
Place apple slices in a bowl and cover with apple juice.
Roll out cookie dough onto prepared sheet. Sprinkle with sugar.
Bake in preheated oven 5 to 7 minutes, until set.
Warm the caramel dip in the microwave, and spread most of it over the cooled cookie. Remove the apple slices from the juice and arrange in rows over the caramel. Drizzle remaining caramel over apples. Cut into squares to serve.
