besides the expiration/date to purchase by. will the egg look like gel or something when u crack it open? how do u know

I have included a few links to help you answer this question. Along with the float method, I have been told to look at the shell (should be chalky not shiny), and crack it to look at the yolk and the white string inside (the fresher it is the more defined it will be), also sniff the egg after you crack it (you will know if its bad...yuck).

Float method:
Fill a deep bowl or pan with enough cold tap water to cover an egg.
Place the egg in the water.
If the egg lies on its side on the bottom, the air cell within is small and it's very fresh.
If the egg stands up and bobs on the bottom, the air cell is larger and it isn't quite as fresh.
If the egg floats on the surface, it it should be discarded.
A very fresh egg out of the shell will have an overall thick white which doesn't spread much and the yolk will stand up.
Grade AA eggs are the highest grade available. They cost more than other grades, but may be a good choice because of their high quality and longer shelf life.

You mean aside from the expiration date, like if you threw the carton away?

I seem to recall (from mom or grandma) that if you put an egg in a glass of water, you can tell how old it is by how straight it stands. If it stands all the way up, it's older than if it lays on its side. If it floats, it's probably not worth cracking open to find out. ;)~

Put one in a glass of water. If it floats, it's bad. I've done that trick many many times trying to extend the expiration date.

Did you realize there is an actual expiration date on the carton? Maybe you should start there.
