You generally want to use twice as much cornstarch as water.

So if you use 2 tablespoons of cornstarch, mix it with one tablespoon of cool or cold water in a small bowl or measuring cup. (You DON'T want to add the cornstarch directly to the hot cooking liquid to be thickened; it will not blend properly.) Mix well until cornstarch is dissolved and you have a very thick gravy-like consistency. Add this mixture to a soup or stew to thicken it. The soup/stew will thicken slowly as it cooks, so depending on how quickly you want to thicken it up, you may want to use a higher quantity of cornstarch and water, or repeat the process.

I would use about 1/2 teaspoon of cornstarch with 2 tablespoons of water. Mix it until the cornstarch is dissolved, and place it in the soup. Let it come to a boil in order for the cornstarch to take effect. If it is still not thick enough, you can make another slurry, but be careful not to make your soup too thick.

Mix the cornstarch in a seperate cup with cold (not warm or hot) water. If you sprinkle the cornstarch right in the pot, it will get lumpy because heat makes it 'clump together' more readily.

Add it a little at a time, you will be surprised at how quickly a teeny bit will thicken up the soup or gravy.

1 Tablespoon corn starch = 2 Tablespoons flour

Corn starch has twice the thickening power of flour.
When a gravy, sauce, soup or stew recipe calls for flour, use half as much corn starch (as you would for flour) to thicken.

When making a gravy, you would use 2 Tablespoons corn starch for each 2 cups of water or liquid.
If you want a soup that is not as thick as a gravy, use less than 2 TBsp. corn starch for each 2 cups of liquid.

To thicken hot liquids, first mix corn starch with a little cold water until smooth.
Gradually stir into hot liquid until blended.
Stirring constantly, bring to boil and boil one minute.
