If you are referring to Genesis 1:26-28, the meaning of the phrase "care for" is more literally translated "rule over". God created man, in part, to rule over the rest of creation. Now with that comes obvious responsibility to make sure that creation is not being destroyed. I believe all Christians should be active in caring for the environment and wild life, but to not put more importance on that than lives of other humans.

There is no specific verse that states it in those words. But it is implied in Genesis 1:28-30, the first thing that God told Adam and Eve. He said to "Be fruitful and multiple, and have domonion (care) over the fish of the sea, the birds of the earth, and every living thing that moves on land". So that would imply a stewardship or caring for the animals and the earth.

The idea is repeated in Genesis 9:1-2, where after the Flood God permits man to begin eating animals, but says that they are "delivered" to him, meaning put in his care and trust.

It says that - right after it says to eat them.

In Genesis 9 there is a change between man and animal. Up until this point in history animals were not used as food. However, God now puts certain animals in the diet of mankind. God also puts fear into the animals, so that they fear mankind. Again animals are used as to fill the needs of men.

However, God continues His command in verse 2 to watch over these animals.

I am not sure I have ever read that. What passage is that out of?
I know in Genesis, God gave dominion over all the creatures of the earth to man. God also made clothes for man out of animal skin!

God made Adam steward of God's creatures. He also gave the commandment THOU SHALT NOT KILL.

Gen 2v
18And the LORD God said, It is not good that the man should be alone; I will make him an help meet for him. 19And out of the ground the LORD God formed every beast of the field, and every fowl of the air; and brought them unto Adam to see what he would call them: and whatsoever Adam called every living creature, that was the name thereof. 20And Adam gave names to all cattle, and to the fowl of the air, and to every beast of the field; but for Adam there was not found an help meet for him.
21And the LORD God caused a deep sleep to fall upon Adam, and he slept: and he took one of his ribs, and closed up the flesh instead thereof; 22And the rib, which the LORD God had taken from man, made he a woman, and brought her unto the man. 23And Adam said, This is now bone of my bones, and flesh of my flesh: she shall be called Woman, because she was taken out of Man. 24Therefore shall a man leave his father and his mother, and shall cleave unto his wife: and they shall be one flesh. 25And they were both naked, the man and his wife, and were not ashamed.

because if they all go extinct, we don't have anything good to eat. You don't even need religion to figure that out.
