This is a recipe for honey cake. The flavor improves the longer it sits, and it is relatively easy to make.

Honey Cake

INGREDIENTS
4 eggs, separated
3/4 cup white sugar
1 cup honey
1/3 cup vegetable oil
3 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
3 teaspoons instant coffee granules
1 cup hot water

DIRECTIONS
Mix coffee in hot water, and then cool.
In a large bowl, beat the yolks with the sugar until creamy. Add the oil and then the honey, beating after each addition. Beat until the mixture is smooth and creamy.
Sift and then measure 3 cups of flour. Combine with salt, baking powder, baking soda, and spices. Add these dry ingredients alternately with the coffee to the honey mixture, stirring only until blended. Do not overmix.
Whip egg whites until stiff. Fold in three additions into the batter. Pour into 2 greased 8 inch square pans.
Bake at 325 degrees F (165 degrees C) for 35 to 40 minutes, or until a toothpick inserted into the middle of cake comes out clean.

BREAD PUDDING WITH HONEY SAUCE

8 cups day-old egg bread, cubed
3 cups milk
1 cup half- and-half
6 eggs, beaten
1/2 cup honey
1 tbs grated orange peel
1 tsp each vanilla and ground cinnamon Honey Cream Sauce
Arrange bread in bottom of lightly greased shallow 2-quart baking dish. Beat remaining ingredients until well blended. Pour over bread cubes in baking dish and let stand 1 hour or until liquid is absorbed by bread. Bake at 275F for 45 to 50 minutes or until knife inserted near center comes out clean.

Makes 8 to 12 servings.

Recipe can be halved.

Honey Cream Sauce:
Beat 1 cup whipping cream until fluffy; add 1/4 cup honey slowly and beat until stiff. Fold in 1 tbs rum. (One-half tsp rum extract can be substituted.)

Makes about 2 cups.


HONEY BARS

2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1 egg, beaten
1 cup sugar
3/4 cup oil
1/4 cup honey
1 cup pecans, chopped
Glaze:
1 cup powdered sugar
2 tablespoons mayonnaise
1 tablespoon water
1 teaspoon vanilla
Preheat oven to 325F. Sift flour, soda, cinnamon and salt. Set aside. Mix sugar, oil, egg, honey and pecans. Add to flour mixture. Put in 9 x 13 inch ungreased pan. Prepare ingredients for glaze. Glaze while warm. Slice and serve like brownies.

Serves 12.

If you like figs this is a good one
3 cups water
1/2 cup sugar
1/2 cup honey
12 allspice berries
12 cloves
12 juniper berries
12 fresh slightly unripe figs
Fresh mint sprigs

Combine water, sugar and honey in heavy large skillet. Stir over low heat until sugar and honey dissolve. Add allspice, cloves and juniper berries. Bring to simmer. Add figs, cover and simmer until figs are just tender, about 20 minutes. Using slotted spoon, transfer figs to bowl. Chill until cold.
Bring cooking liquid to boil. Boil until reduced to syrup consistency, about 5 minutes. Strain. Cool.
Arrange figs in dessert goblets. Drizzle syrup over. Garnish with mint and serve

Golden Apple Honey Crepes

Ingredients:
***Apple Filling***
4 medium Golden Delicious apples
1/4 cup butter or margarine
1 cup apple juice
2 tablespoons honey
1/8 teaspoon salt
***Crepe Batter***
2/3 cup flour
1 cup milk
1/4 cup vegetable oil
2 large eggs
1 tablespoon sugar


Directions:

Combine all crepe ingredients; beat until smooth. Lightly brush 8-inch skillet or crepe pan with butter or margarine. Heat over medium heat. Pour 2 tablespoons batter into skillet and swirl to thinly coat bottom. Cook until lightly browned and cook other side if desired. Remove crepe from skillet and place on tray or platter with waxed paper between crepes. Wrap and freeze if desired.

For Filling: Pare apples, core and slice thinly.

Gently saute apple slices in butter. Stir in juice, honey and salt. Cover and simmer until barely tender. Remove apples with slotted spoon. Keep warm. Blend cornstarch and water.

Stir into hot juices and stir until mixture boils and thickens. Return apples to pan. Spread generous spoonful of apple mixture down the center of each crepe. Roll up crepe; garnish with sour cream.
