Windows Vista Ultimate is a little more high-tech, and has a few more features than Vista Home Premium.

Vista Premium is the premium package for the Home.

It adds Aero (The Glass Effect), and also has lots of other stuff included for the home, such as media center.

Ultimate combines all of this, and adds all of the business applications too, that you get in Vista Business.

You can also have some extra games and MPEG wallpapers, although this slows your PC down.

One of the big-buzz differences in Vista Ultimate is the DreamScene desktops that support mpeg and wmv wallpaper formats (instead of static wallpaper, full video as your desktop background).
