Fill a pan with cool water and a little salt. Place eggs in the pan of water. Place pan on stove, and put heat on medium high. Once the water begins boiling, time about three minutes. Run eggs under cold water.

Putting eggs in boiling water tends to increase the number of eggs that crack, so always put the eggs into cool water and then boil.

Earlier this year I was inundated with guinea eggs! I just boiled them and stored them as I would a small chicken egg. They are hard boiled about approx 3 minutes.

Try bringing them to a boil..immediately remove..and let them sit for about 10 minutes before removing from the water.

Just a shorter time :) If they are very fresh then you may have trouble peeling them neatly. Just add a little vinegar to the water you boil them in :)
