1. Preheat the oven to 220C/425F/Gas 7.
2. Place the pastry discs onto a non-stick baking tray and then place another baking tray on top.
3. Bake in the oven for 6-8 minutes.
4. Remove from the oven and sprinkle with icing sugar. Serve.
or Banana puff cups
2 tbsp honey
4 tbsp caster sugar
1 tbsp fresh basil, finely chopped
1 banana, chopped
55g/2oz puff pastry
Method
1. Preheat the oven to 220C/425F/Gas 7. Select a large ovenproof cup or large ramekin.
2. Roll out the pastry and cut into a round big enough to cover the cup or ramekin.
3. In a saucepan, heat the honey, sugar, basil and chopped banana for 1-2 minutes or until the sugar has melted.
4. Pour into the cup or ramekin and top with the puff pastry lid.
5. Place into the oven for 8-10 minutes, or until the pastry is cooked and golden brown.
6. Serve.
or Richmond Maids of Honour
½ x 500 g pack fresh puff pastry
flour for dusting
8 oz (225 g) curd cheese
1½ oz (40 g) golden caster sugar
grated zest 1 lemon
1 oz (25 g) ground almonds
1½ oz (40 g) whole candied lemon peel, finely chopped
1 large egg plus 1 large egg yolk
about 2 tablespoons good-quality lemon curd
icing sugar for dusting
Pre-heat the oven to gas mark 6, 400°F (200°C).
Begin by cutting the block of pastry in half so that you have two squares, and then sprinkle a surface with flour and roll each piece into a square of about 11 inches (28 cm). Then, using the cutter, cut out 9 circles from each piece. Be careful as you do this – just give the cutter a sharp tap and lift it, don't be tempted to twist it. Now line the tins with the pastry rounds; you should have 18 altogether.
Then, in a bowl, combine the curd cheese, sugar, lemon zest, ground almonds and chopped candied peel, then beat the egg and egg yolk together in a separate bowl and add this to the rest of the ingredients. Mix very thoroughly with a large fork until everything is very evenly blended.
Next, spoon half a teaspoon of lemon curd into the base of each pastry case – don't be tempted to add more as it will bubble over during the cooking – then spoon a dessertspoon of the curd cheese mixture on top of this. Then, when all the mixture has been added, bake the tarts in two batches on the centre shelf of the oven for about 20-25 minutes, by which time the mixture will have puffed right up and turned a lovely golden brown colour. Now take them out of the oven and transfer them to a wire rack to cool. Don't worry if you see them start to sink a little, that's absolutely normal. If you like, you can give them a faint dusting of icing sugar before you serve them.

300g/10½oz ready-made puff pastry
1 tsp icing sugar
½ tsp cinnamon
drizzle honey
Method
1. Heat the oven to 220C/425F/Gas 7.
2. Roll out the pastry and cut into thin strips.
3. Lay onto a baking sheet in a twist shape. Bake in the oven for 8-10 minutes or until golden and risen.
4. Leave to cool, then sprinkle with icing sugar and cinnamon.
5. Drizzle with honey and serve.
or Puff fancies with chocolate sauce
For the puff fancies
25g/1oz unsalted butter
1 tbsp olive oil
75g/2¾oz puff pastry, cut into squares
2 tbsp honey
2 tbsp hazelnuts, choppped
For the chocolate sauce
100ml/3½fl oz condensed milk
50ml/2fl oz double cream
100g/3½oz dark chocolate, melted
Method
1. For the puff fancies, heat the butter and oil in a saucepan over a medium heat and stir to mix.
2. Add the puff pastry squares and fry for 2 minutes on each side until golden.
3. For the chocolate sauce, heat the condensed milk in a saucepan over a medium heat until it thickens.
4. Add the cream and melted chocolate and stir until smooth.
5. To serve, place the puff fancies onto a plate, drizzle over the honey, sprinkle over the nuts and spoon around the melted chocolate
or Orange tart
170g/6oz puff pastry
1 orange, peeled and sliced
caster sugar, to sprinkle
Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Roll out the pastry and cut into three rings.
3. Place on a baking tray and top with orange slices.
4. Sprinkle with sugar and place in the oven for 5-6 minutes, or until golden.
5. Serve.

Puff Pastry Fruit Tartlets
Preparation: 15 minutes
Cooking: 15 minutes
Easy and quick to make these fruit tartlets make a great last minute dessert or tart for a picnic. You can try them with whatever fruit is seasonal at the time, apples, pears, plums, figs, mangoes all work well.
* 400g puff pastry
* 6 strawberries, stem removed and sliced lengthwise
* 3 peaches, pitted and sliced
* 4 tbsp caster sugar
To Serve
* clotted or thick cream
* or vanilla ice-cream
Method
1. Tartlets: Roll the pastry out so that it is around .75mm thick. Cut the pastry with a 12cm ring into 6 rounds. Place the pastry rounds onto a lightly greased oven tray. Fan 3-4 slices of the peach on the 3 of the pastry rounds and then fan the strawberries out on the remaining ones. Sprinkle the sugar over the tartlets evenly. Leave the pastry to stand for 15 minutes before cooking.
2. To Cook: Preheat an oven to 200°C. Place the pastry in the centre shelf of the preheated oven. Leave them to cook for 10-15 minutes until the pastry is golden and puffed up. Remove the tartlets from the oven and serve them hot or cold.
3. To Serve: Serve the tartlets with cream or ice-cream.

Almond Puff Pastries
INGREDIENTS
1 (17.3 ounce) package frozen puff pastry, thawed

1 cup sliced almonds
1 cup sugar
2 cups whipping cream, whipped
confectioners' sugar
DIRECTIONS
Unfold pastry sheets onto a lightly floured surface. Cut each sheet into nine 3-in. squares. Place 1 in. apart on greased baking sheets. In a small bowl, beat egg yolk and water; brush over pastry squares. In another bowl, beat egg white; add almonds and sugar. Spread over each square. Bake at 375 degrees F for 20-25 minutes or until well puffed and browned. Cool completely on wire racks.
Split pastries in half horizontally. Fill with whipped cream; replace tops. Sprinkle with confectioners' sugar. Serve immediately.

Ok these are easy and good. The recipe calls for store-bought puff pastry, but you can certainly use homemade.
The recipe sounds complicated, but isn't.
Puff Pastry Pillows
1 package (17.3 ounces) frozen puff pastry, thawed
1 egg
1/4 cup milk
1 to 2 tablespoons coarse (decorator) sugar
(usually found in or near the bakery at the market)
FILLING:
1/4 cup all-purpose flour
1 cup milk
1 cup butter, softened
1 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/4 teaspoon salt
Carefully open each puff pastry sheet. Cut each sheet of pastry at creases, forming 3 strips. Cut each strip widthwise into 7 pieces.
Combine egg and milk; lightly brush egg mixture over pastry. Sprinkle with sugar. Place on lightly greased baking sheets. Bake at 400° for 10-12 minutes or until golden brown. Remove to wire racks to cool. Split into top and bottom halves.
In a saucepan, combine the flour and milk until smooth. Bring to a boil over medium heat; cook and stir for 1 minute or until thickened. COOL.
Transfer to a mixing bowl; beat in the butter, sugar, vanilla, almond extract and salt until light and fluffy, about 10 minutes. Spread (or pipe) about 1 tablespoonful on bottom half of each pastry; replace tops. Store in refrigerator. Yield: about 3-1/2 dozen. (you can color the filling if you wish)

Bake and cool 6 puff pastry shells as directed on the package. Make lemon pudding from a mix, stir in 1 teaspoon of grated lemon peel and cool to room temperature. Spoon 1/3 cup of pudding into each shell and top with a little whipped cream. Serve immediately or cover and refrigerate until time to serve. Garnish with more lemon peel. If you can't find shells and have to use sheets, try this one: Thaaw one sheet of puff pastry for 1/2 an hour. Heat oven to 400 degrees,. Mix 6 ounces of chocolate chips with 1/4 chopped walnuts. Unfold the pastry on a floured surface and roll it into a 12-inch square. Cut into 9 4-inch squares. Spoon 2 tablespoons of the chocolate walnut mixture into the center of each square. Brush the edges of the squares with water, the fold the corners to the center on top of the filling, twisting together tightly to seal. (If you like, pull out the corners and fan them for a decorative look.) Bake for 15 minutes, until golden, then cool on a wire rack. Sprinkle with powdered sugar and garnish with chocolate curls or fresh mint.

Easy one is sausage rolls, it just Sausage meat [you can mix in herbs if you wish]Flour to roll out The pastry and an egg to brush on.
Another is cream puffs , roll out your pastry to 1/4th inch thick, cut into 4"x2" strips bake for ten to fifteen minutes, leave to cool, then put a spread of jam on half them double cream put a puff pastry top on either sprinkle with icing sugar or mix some icing sugar with a little water and drizzle it over the top leave to set, they are now ready to eat.

Buy some frozen mixed berries from the supermarket and then you can make a fruits of the forest strudel. Easy, you just roll out the pastry into a rectangle, lightly stew the fruit adding the sugar to taste. Allow the stewed fruit to cool and then spread onto the rolled out pastry and roll and seal. You then need to make some slits across the top. Cook in a moderate to hot oven for the correct time for the pastry. Good luck!

easiest is palmiers
just sprinkle pastry with brown sugar, roll up like a swiss roll then cut into thin slices, slightly flatten then bake off for the normal pastry cooking time (usually 25/30 mins gas 5/6 or 200)

INGREDIENTS
1 cup water
1/2 cup butter
1/4 teaspoon salt
1 cup all-purpose flour
4 eggs
1 (8 ounce) package cream cheese, softened
2 cups milk
1 (5 ounce) package instant vanilla pudding mix
1 (1 ounce) square unsweetened chocolate, chopped
1 tablespoon butter
1 cup confectioners' sugar
2 tablespoons boiling water
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
For icing: In small saucepan, melt chocolate and 1 tablespoon butter over low heat. Remove from heat and, with electric mixer, beat in confectioners' sugar and 2 tablespoons hot water. Beat until smooth. Drizzle over filled eclairs.
For shells: In medium saucepan bring 1 cup water to a boil, stir in 1/2 cup butter and salt. Stir until melted. Add flour all at once and stir vigorously until mixture forms a ball. Remove from heat and beat in eggs, one at a time, until smooth. Drop by tablespoons onto baking sheet.
Bake 15 minutes in the preheated oven, then reduce heat to 375 degrees F (190 degrees C) and bake until golden, 10 to 15 minutes. Cool completely.
For filling: In large bowl, beat 1/2 cup of milk, a little at a time, into softened cream cheese, until creamy. Beat in remaining 1 1/2 cups milk and pudding mix. Stir until thick, 1 to 2 minutes. Cut tops off cooled pastry shells and fill. Replace tops.
