I have a couple suggestions before I give a few of the hot dog ideas. 1. Make sure which ever sauce/topping you choose (if only one) isn't really hot, or too fattening. Some people might not enjoy super spicy or want the extra weight. Also, beware of relish-type things, with bits of things that could get stuck between teeth. 2. Be certain you do not use peanuts, or peanut oils. Peanuts are a very common allergen, you don't want someone going to the hospital during your son's wedding... Now for ideas:
Ketchup mixed with fat-free mayo makes a nice sauce. Beanless chili. Durkee brand sandwich spread is very good on hot dogs. Or a mango salsa... You could cook the hot dogs in peaches (just canned peaches) and serve with lightly salted tomato wedges. How about crushed pineapple with cilantro (fresh)? Well, that's all I've got. Now I'm craving a hot dog with Durkee spread... thanks a lot, I don't have either. :-)

1/3 cup and 1 tablespoon and 1 teaspoon distilled white vinegar
1-3/4 teaspoons salt
3/4 teaspoon ground black pepper

In a saucepan over medium heat, slowly cook and stir the onion in vegetable oil until soft. Mix in the ketchup, sweet pickle relish, sugar, vinegar, salt and pepper. Simmer until ready to serve.
Zesty Cole Slaw
INGREDIENTS
2-1/2 cups mayonnaise
3-3/4 cups creamy salad dressing (e.g. Miracle Whip)
1/2 cup and 2 tablespoons prepared horseradish
2 tablespoons and 1-1/2 teaspoons white vinegar
2 tablespoons and 1-1/2 teaspoons dill weed
1 cup and 1 tablespoon sugar
5 (16 ounce) packages coleslaw mix
DIRECTIONS
In a large bowl, mix together the mayonnaise, creamy salad dressing, horseradish, vinegar, dill weed and sugar. Add coleslaw mix, and stir to coat. Refrigerate at least 3 hours before serving to blend flavors.
Both these recipes are for 40 servings. Good Luck and Have Fun!

Not sure if this recipe will be high scale enough for you, but it is rather good. Just mix slightly equal parts of ketchup and mustard, along with a smaller portion of mayo together. You want to achieve a light yellow color. Now since this is for a wedding, you might want to exclude this next item, but diced onions make this thing rock. Dash in some Worcestershire sauce for a little salt and smokey flavor. Probably not the ideal for a social gathering, but works great for cookouts, casual, etc. Try a small sample (tsp size of ketchup, mustard; 3/4 tsp of mayo and add in onions, etc.) to see if you like. Enjoy.
