Sea Bass is a very mild flavored fish, much like orage roughy. If you really want a non-"fishy" fish you should consider Mahi Mahi. Grilled it will have little or no fish-like flavor and it has a texture more like chicken.
I am fish eater (80-90 of diet) but wife does not like fish and as a former chef I have experimented whit all varieties. She will eat Mahi Mahi over any other due to the flavor and texture

First of all you have to have fresh fish and that should NOT smell "fishy" but rather like the sea! Then you need to know that there are "oily" fish like mackerel and sardines and "white or firm" fish like sea bass and halibut. Oily fish taste more fishy while white fish are very mild.
Sea bass is a very mild tasting fish and is regarded by many as one of the most delicious.
There are numerous fish sold as sea bass including Chilean Sea Bass (which is not a bass). These are all firm fleshed mild white fish which can be prepared many ways and are great as long as you don't overcook them. When you cook fish you are really warming it up (it can be eaten raw). Treat fish as you would a steak - if you like your steak rare try your fish that way too. This may sound odd but you will like the result (medium rare is my choice). Well done fish tastes more fishy and has an unpleasant texture and mouth feel.
If you actually get real sea bass try cooking it with the skin on, crispy bass skin is actually very tasty. Also, if you can get whole fish cook it on the bone (make some diagonal cuts to the bone to let the heat in) and you will find the result is more unctuous due to the gelatin contributed by the bones.
Good luck. Well prepared fresh fish is a joy but most home cooks ruin it by overcooking.

It is delicious fish.... firm ,so it can handle a nice garlic butter sauce. Bake or broil until it flakes easily. Like all fish, it should not be overcooked. If a fish has that fishy smell, it's not fresh.

dont overcook (any fish or seafood) or it will be completely ruined. become like rubber
