I just love nachos. I could eat them for breakfast, lunch and dinner. However, they are loaded with grease from the nacho chips and grease from the cheese. Can you buy low fat or fat free cheese? Any suggestions for healthier nachos?

...buy chips that are lower in fat (those are usually baked, not fried)... look on the back of the bag and compare brands ounce for ounce

....use fewer chips, less cheese, and more non-fat stuff like salsa (or fresh pico de gallo--yum), other veggies, beans, maybe even lean meat, etc.
(.....and maybe try eating those things between two regular corn tortillas which you've lightly fried, sandwich-style, on the stove --spray or lightly coat the pan or the outside of each corn tortilla with oil first . . . could maybe cut it up into small pieces for eating too)

...use a reduced fat cheese (most fat-free cheeses taste pretty bad IMO) and reduced fat sour cream if you have to have it

...guacamole is high fat (but the good kind of fat), so *some* of that is good if you like it

...use really hot spices, or at least as hot as you can tolerate; they will substitute for a lot of fat

i use whole grain chips, fat free/reduced fat cheese and sour cream. I have seen cheese made with skim milk but i have never tried it so i dont know how good it is but i cant tell the difference between regular cheese and the fat free or reduced fat kind. I also use the crumbles and shredded cheese so i can sprinkle it on instead of piling on layers of cheese packets (i totally could cuz i have an unhealthy love of cheese) It doesnt make them 100% healthy but it does cut out alot of the fat. i too am a nacho fan so rock on!! :)

p.s you could also try the organic section of your supermarket or stores like trader joes..im sure they have stuff there that you might like
