Was about to give you a recipe but cannot really better the one you have just been given!
I would just say it cannot be Beef Stroganoff if you use anything other than beef. I have seen Pork suggested,but Hey! Why not experiment? That is what cooking is all about. Try a recipe then tailor it to suit yourself!

the only thing that i would substitute for beef is pork fillet,although venison might work. Chorizo or garlic sausage would be horrible in a stroganoff as it would not work with the creaminess of the sauce.

QUICK AND EASY BEEF STROGANOFF
1 lb. stew beef or round steak cut into strips
2 cans cream of mushroom soup
2 cans cream of chicken soup
1 pkg. dry onion soup mix
8 oz. sour cream, if desired
Brown beef about 3/4 of the way through in skillet. Drain. Mix ingredients together in a slow cooker and heat, DO NOT DILUTE SOUPS. Serve over steamed rice or buttered noodles. Great also over a baked potato.

Authentic beef stroganoff is made with beef tenderloin (filet mignon), but I've seen recipes for it that call for hamburger (shudder).
I suppose you could use chorizo or sausage, but then you shouldn't call it stroganoff, because it's not.

Beef Stroganoff
1 1/2 to 2 pounds top sirloin roast, trimmed
1 teaspoon salt
1 teaspoon ground black pepper
2 tablespoons butter or margarine
1 tablespoon olive oil
1 tablespoon all-purpose flour
1 cup beef bouillon or broth
1 medium onion, quartered and sliced
3 tablespoons sour cream, room temperature
Cut beef into narrow 2-inch long strips about 1/2-inch thick. Sprinkle meat with salt and pepper. Melt 1 tablespoon butter in a medium saucepan. Blend in flour; gradually stir in beef broth, stirring and cooking until thickened and smooth.
Heat remaining 1 tablespoon of butter and 1 tablespoon olive oil in a small saucepan over medium heat; quickly brown meat strips and onion on all sides. Add meat and onions to beef sauce. Cover and cook on low for 10 minutes; stir in sour cream and heat through but do not boil. Serve over buttered noodles.

Beef strogonoff is best when served in the traditional way, with matchstick fries... only use good filet beef and cook it quick, otherwise it is not a stroganoff...
300g Filet beef
25g butter
Paprika
2 Shallots
75g Girolle mushrooms (or button mushrooms)
Olive oil
150ml sour cream (or single cream)
Parsley
Salt & black pepper

I would have thought that chorizo and garkic sausage would be too spicy.
i would stick to finally diced beef or steak
