Could it be cous-cous? I tried that one time and I don't think I prepared it properly. It's sort of like grits. They can come out too stiff and lumpy.

Risotto may be what you are looking for, but you do realize that it isn't pasta...right? It is a rice dish! Happy cooking!

Um, risotto is rice and not pasta but okay. Also, all Italians eat their pasta "al dente" and not overcooked.

I live in Italy.

"Risotto" is made with 'riso' (rice) and itsn't a pasta !!!
I don't realize how it had been possible somebody has understood you were looking for this "seed" or "fruit" of a plant...!!!
Pasta is a totally different thing.

any kind of pasta noodles you work with has to be "al-dente"which means firm or the dishes you make with it will be ruined.You do not want to stir the noodles too much because they will turn mushy and really messy.
